TUSCAN WHITE BEANS WITH OLIVE OIL

Provided by Food Network

Yield 4 to 6 servings

Number Of Ingredients 10

1 pound dried Great Northern, navy, pea or other white beans
2 quarts chicken stock
1 teaspoon salt
1/3 cup olive oil
2 tablespoons chopped garlic
1/4 cup chopped fresh flatleaf parsley
2 tablespoons chopped fresh thyme
1/2 teaspoon dried red pepper flakes
1/4 cup fresh lemon juice
Salt and freshly ground black pepper to taste

Steps:

  • Sort the beans to make sure they are free of stones or other debris. Rinse, then cover with cold water, refrigerate, and soak overnight. The next day, drain the beans, place them in a large pot, and cover with the stock. Bring to a boil, then lower the heat and simmer the beans for 1 1/2 to 2 hours, or until they are tender. Add 1 teaspoon of salt in the final 15 minutes of cooking. The addition of salt earlier in the cooking process will result in tough beans.
  • Remove the beans with a slotted spoon and transfer to a large mixing bowl. Add all the remaining seasoning and other ingredients to the warm beans in the bowl and toss together. Adjust the salt and add freshly ground pepper to taste. Serve warm or chilled.

Tips:

  • When selecting cannellini beans, choose beans that are plump and free from blemishes. Avoid beans that are shriveled or have a dull appearance.
  • To save time, you can use canned cannellini beans instead of dried beans. Just be sure to rinse and drain the beans before using.
  • If you don't have extra virgin olive oil, you can use a good quality olive oil instead. However, extra virgin olive oil will give the dish a more flavorful taste.
  • Use fresh garlic for the best flavor. If you only have garlic powder, use about 1/4 teaspoon.
  • If you like your beans a little more soupy, add a little bit of vegetable broth or water to the pot.
  • Serve the beans immediately, or let them cool and store them in the refrigerator for up to 3 days.

Conclusion:

Tuscan white beans are a delicious and versatile side dish that can be enjoyed on their own or with a variety of other dishes. They're also a good source of protein and fiber. With just a few simple ingredients and a little bit of time, you can easily make this classic Italian dish at home.
