MOCK TWICE BAKED POTATOES (CAULIFLOWER)

Mock Twice Baked Potatoes (Cauliflower) image

I made this for Thanksgiving once and one of my daughter's friends wanted to know what was in the "potatoes"! People who claim to dislike cauliflower love this dish.

Provided by Sooz Cooks

Categories     Cauliflower

Time 40m

Yield 6 serving(s)

Number Of Ingredients 8

16 ounces frozen cauliflower
1/2 cup sour cream
2 ounces cream cheese (cut up)
1 tablespoon butter
1 cup cheddar cheese, divided
6 slices bacon, fried and crumbled, divided
1 1/4 teaspoons salt
1/4 teaspoon pepper

Steps:

  • Pre-heat oven to 400 degrees.
  • Place the frozen cauliflower in a 1 1/2-quart casserole. Add 1/2 cup water. Cover and microwave on high for 7 minutes. Stir and cook another 4 minutes. Let stand 2 minutes. Place in a colander to drain and blot with paper towels to absorb as much moisture as possible.
  • Place the cauliflower in a food processor. Add the sour cream, cream cheese, butter, half the cheese, half the bacon, salt and pepper to processor. Process until contents have the smooth consistency of mashed potatoes.
  • Grease the same casserole used for cooking the cauliflower and pour in the cauliflower mixture.
  • Top with the remaining cheese and crumbled bacon.
  • Bake uncovered 20 minutes at 400º or until lightly browned.

Tips:

  • Choose the right cauliflower: For the best results, select a head of cauliflower that is firm and heavy for its size. Avoid heads with brown spots or bruises.
  • Cook the cauliflower thoroughly: Overcooked cauliflower can be mushy, but undercooked cauliflower can be tough and fibrous. To ensure that your cauliflower is cooked through, pierce it with a fork - it should be tender but still slightly firm.
  • Let the cauliflower cool slightly before handling it: This will prevent it from breaking apart.
  • Use a food processor or blender to mash the cauliflower: This will give it a smooth, creamy texture.
  • Season the cauliflower well: Salt, pepper, and garlic powder are a good starting point. You can also add other spices or herbs to taste.
  • Don't be afraid to experiment: There are many different ways to make twice-baked cauliflower. Get creative and try different ingredients and flavors.

Conclusion:

Twice-baked cauliflower is a delicious and versatile dish that can be enjoyed as a main course or side dish. It's a great way to get your daily dose of vegetables, and it's also a good source of fiber, vitamins, and minerals. Plus, it's a great way to use up leftover cauliflower. So next time you're looking for a healthy and flavorful dish, give twice-baked cauliflower a try.
