Number Of Ingredients 8

3 large baking potatoes (2-1/4 lb.)
1/2 cup fat-free reduced-sodium chicken broth
1 cup KRAFT 2% Milk Shredded Sharp Cheddar Cheese, divided
1/3 cup thin green onion slices
1/4 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
1 tsp. GREY POUPON Dijon Mustard
1/4 tsp. paprika
Make It!

Steps:

  • HEAT oven to 400ºF. PIERCE potatoes in several places with tip of sharp knife. Bake 1 to 1-1/4 hours or until tender. Immediately cut potatoes lengthwise in half; scoop out centers, leaving 1/4-inch-thick shells. BEAT potato pulp, broth, 1/2 cup cheese, onions, sour cream and mustard with mixer until well blended. Spoon into shells; top with remaining cheese and paprika. BAKE 20 min. or until heated through.

Tips:

  • Select the right potatoes: Choose large, starchy potatoes like Russets or Idaho potatoes. They hold their shape well and become fluffy after baking.
  • Scrub and pierce the potatoes: Before baking, scrub the potatoes clean and pierce them with a fork several times. This helps the steam escape, preventing the potatoes from bursting.
  • Bake the potatoes until tender: Bake the potatoes at 400°F (200°C) for about an hour, or until they are tender when pierced with a fork.
  • Let the potatoes cool slightly: Let the potatoes cool for a few minutes before handling them. This will make them easier to scoop out and prevent them from breaking.
  • Scoop out the potato flesh: Use a spoon to scoop out the potato flesh, leaving a thin shell. Be careful not to puncture the shell.
  • Mash the potato flesh: Place the potato flesh in a bowl and mash it until smooth. You can use a potato masher, a fork, or a hand mixer.
  • Add your favorite fillings: Stir in your favorite fillings, such as cheese, bacon, sour cream, chives, or jalapeños. Season with salt and pepper to taste.
  • Stuff the potato shells: Spoon the mashed potato mixture back into the potato shells. Top with additional cheese, if desired.
  • Bake the potatoes again: Bake the stuffed potatoes at 350°F (175°C) for about 20 minutes, or until the filling is heated through and the cheese is melted and bubbly.
  • Garnish and serve: Garnish the twice-baked potatoes with chopped fresh herbs, such as parsley or chives. Serve immediately.

Twice-baked potatoes are a delicious and versatile dish that can be enjoyed as a main course or a side dish. With endless variations and toppings, you can customize them to your liking.
