Time 1h45m

Yield 6 servings

Number Of Ingredients 9

6 russet potatoes, scrubbed clean
Olive oil, for oiling the potatoes
Salt and freshly ground pepper
Salt and freshly ground pepper
1 cup grated Parmesan
1/2 cup whole milk
1/2 cup sour cream
3 tablespoons unsalted butter, melted
1 bunch scallions, sliced

Steps:

  • Preheat the oven to 400 degrees F.
  • Rub the potatoes with olive oil and salt; prick them a few times with a fork. Place the potatoes on a baking sheet and bake until tender, 50 minutes to 1 hour. Let cool slightly.
  • Make a slit in the potatoes and scoop out most of the flesh into a large bowl, leaving 1/2 inch behind so the skins hold their shape. To the bowl, add 1/2 cup of the Parmesan as well as the milk, sour cream, melted butter and half of the scallions; fold together to combine. Season with salt and pepper. Divide the mixture among the potato skins, mounding a bit, and sprinkle with the remaining 1/2 cup Parmesan.
  • Bake the stuffed potatoes until golden brown on top, 15 to 20 minutes. Sprinkle with the remaining scallions.

I developed this recipe to lure my kids into eating spinach. It worked! Spinach in almost any form is one of their favorite veggies. Big "kids" enjoy these rich, filling potatoes as well, and I often make them for dinner parties. I haven't tried freezing them, but I imagine you could make a batch and stick them in the freezer to keep for another day.

Tips:

  • Choose the right potatoes: Russet potatoes or Idaho potatoes are best for twice-baked potatoes because they have a high starch content that makes them fluffy and light.
  • Bake the potatoes until they are fork-tender: This will ensure that they are cooked through and easy to scoop out.
  • Let the potatoes cool slightly before handling them: This will prevent them from breaking apart.
  • Use a spoon to scoop out the center of the potatoes: This will create a well for the filling.
  • Be careful not to overfill the potatoes: You want to leave enough room for the filling to expand.
  • Top the potatoes with cheese and breadcrumbs: This will give them a golden brown crust.
  • Bake the potatoes until they are heated through and the cheese is melted: This will take about 15 minutes.
  • Serve the potatoes immediately: They are best enjoyed hot out of the oven.

Twice-baked potatoes with spinach and onion are a delicious and versatile dish that can be served as a main course or a side dish.
