You can have your french fries and eat them too! This recipe is perfect for the dieter. Not even a trace of fat. I got this recipe... I don't know HOW many years ago, out of a cook book that was put out by one of Oprah Winfrey's personal chefs.

Time 1h10m

Number Of Ingredients 4

5 large russet baking potatoes
cooking spray
2 large egg whites
1 Tbsp cajun seasoning or old bay seasoning

Steps:

  • 1. Preheat oven to 400/.
  • 2. Slice each potato lengthwise into 1/4 inch ovals, then slice lengthwise into thin french fry strips. Place french fries in a bowl of ice water to crisp.
  • 3. Line a baking sheet with aluminum foil or the new nonstick foil, and coat the foil with a few sprays of the cooking spray.
  • 4. Combine the egg whites and the Cajun spice or Old Bay Seasoning in a bowl.
  • 5. Add the potatoes and mix to coat. Pour the coated potatoes onto the prepared baking sheet and spread them out into a single layer, leaving a little space between them.
  • 6. Place the baking sheet on the bottom shelf of the oven. Bake for 50-60 minutes, or until the fries are crispy and done, turning them every 5 minutes or so with a spatula so that they don't stick to the foil and brown evenly.
  • 7. Serve immediately.

These are so incredibly good...Cajun and Creole seasoning can be interchanged. Also, feel free to try with other seasoning blends.

Number Of Ingredients 3

5 large baking potatoes
2 large egg whites
1 Tbsp cajun seasoning

Steps:

  • 1. Oven to 400 degrees. Slice potatoes into 1/4" ovals then lengthwise into matchsticks. Coat cookie sheet with PAM. Combine egg whites and spice in a bowl, add potatoes and mix to coat. Pour onto cookie sheet, spread into a single layer leaving space in between. Place on the bottom shelf of the oven and bake 40-45 min, turning every 6-8 min to brown evenly. Serve immediately.

Tips:

  • Choose the right potatoes: Look for firm, starchy potatoes like Yukon Gold, Russet, or Idaho potatoes. These varieties hold their shape better during baking and provide a crispy exterior.
  • Cut the potatoes evenly: Uniformly sized potato slices ensure even cooking and prevent some pieces from becoming overcooked while others remain underdone.
  • Coat the potatoes thoroughly with oil: This helps create a golden brown, crispy exterior and prevents the potatoes from sticking to the baking sheet.
  • Use parchment paper or a silicone baking mat: This prevents the potato slices from sticking to the baking sheet and makes cleanup easier.
  • Bake the potatoes at a high temperature: This creates a crispy exterior and fluffy interior. Make sure to preheat the oven before baking to ensure even cooking.
  • Flip the potato slices halfway through baking: This ensures that both sides become evenly golden brown and crispy.
  • Season the potatoes with your favorite herbs and spices: This adds flavor and makes your unfried French fries even more delicious.
