I created these after Halloween, when I had way too much candy left over. You can make them with any mini chocolate candy, but if you use peanut butter cups, throw them in the freezer just before unwrapping so the chocolate won't stick to the paper. -Tara John, Plymouth, Minnesota

7 Butterfinger candy bars (2.1 ounces each), coarsely chopped
1 cup butter, softened
2 large eggs
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
27 Reese's mini peanut butter cups
27 miniature Snickers candy bars

Steps:

  • Preheat oven to 375°. Place Butterfinger candy bars in a food processor; process until ground. In a large bowl, cream butter and 2 cups ground candy bars until blended. Beat in eggs. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture., Shape into 1-in. balls; roll in remaining ground candy bars. Place 2 in. apart on parchment-lined baking sheets. Bake 8-10 minutes or until tops are cracked., Immediately press a piece of candy into the center of each cookie. Cool on pans 2 minutes. Remove to wire racks to cool. Freeze option: Freeze cookies, layered between waxed paper, in freezer containers. To use, thaw before serving.

18 1/4 ounces yellow cake mix
1/2 cup oleo
3 eggs
8 ounces cream cheese
1 lb powdered sugar
1 cup coconut
1 cup nuts (your choice)

Steps:

  • Preheat oven to 325.
  • Combine cake mix, oleo, and 1 egg.
  • Press into bottom of a 10x15 pan.
  • Beat remaining eggs. Add cream cheese and powered sugar. Mix well.
  • Stir in coconut and nuts.
  • Spread over crust.

This recipe was originally in the LA Times. The story is that they are so good that they get sucked up like a vacuum cleaner! My neighbor brought some over to us and they were so rich, delicious and different, that I had to have the recipe. You make them like a bar cookie.

1/2 cup margarine or 1/2 cup butter
1 (18 1/2 ounce) box yellow cake mix
1 large egg
2 large eggs
1 (8 ounce) package cream cheese, softened
1 lb powdered sugar
1/2 cup coconut, shredded
1/2 cup walnuts, chopped

Steps:

  • In a large bowl, combine the cake mix, margarine and 1 egg until moistened.
  • Pat mixture into a 15 x 10-inch greased jelly roll pan.
  • Bake at 350° for 10 minutes.
  • Remove and cool while you make the top layer.
  • In large bowl, beat 2 eggs lightly.
  • Beat in cream cheese and powdered sugar.
  • Add coconut and nuts.
  • Spread mixture evenly over curst in pan.
  • Bake at 325° for 40-50 minutes or until golden.
  • Cool in pan on a rack to room temperature.
