¼ cup olive oil
1 large sweet potato, peeled and halved
1 large Red Delicious apple, unpeeled
2 tablespoons brown sugar
½ teaspoon ground cinnamon

1 pinch ground nutmeg
ground ginger

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil; spray with nonstick spray.

3/4 cup 1% low-fat milk
1/4 cup packed brown sugar

1/2 cup plus 3 tablespoons half-and-half

2 1/2 c dark brown sugar
2 vanilla beans
1 c spiced rum
freshly grated nutmeg to taste
1 tsp salt

  • 1. Preheat oven to 350.
  • 2. Peel yams and cut into 1-2 inch cubes put in a large stock pot, add just enough water to cover. Add vanilla beans, rum, salt, nutmeg and 2 cups of the brown sugar.
  • 3. Bring to a boil then reduce to simmer. Cook until the yams are almost cooked through, about 10 minutes.
  • 4. Put yams into a 12 by 9 baking dish with about 2-3 cups of liquid and vanilla beans. Sprinkle with remaining 1/2 cup of brown sugar and dot with butter.
