Steps:

  • Melt butter in heavy large skillet over high heat.
  • Season veal with salt and pepper.
  • Working in batches, add veal to skillet and saute until just golden brown, about 2 minutes per side.

1/4 teaspoon white pepper

4 9 - 10 ounce veal rib chops, trimmed

Steps:

  • Boil white wine and minced shallot in medium saucepan over high heat until mixture is reduced by half, about 6 minutes. Strain mixture; return wine to pan. 2 ounces good Roquefort cheese
1 tablespoon chopped scallions
8 (1-inch-thick) veal chops

1 clove garlic, minced

4 slices flat anchovy, chopped

6 veal chops, preferably cut from the rack, each 1½ inches thick and frenched (ask the butcher to do this)
Flour
¼ cup vegetable oil
4 tablespoons unsalted butter
6 cloves garlic (peeled, if you like)
2 medium bay leaves
½ teaspoon dried thyme
Salt
freshly ground black pepper
2 tablespoons red wine vinegar
½ cup chicken stock

Steps:

  • Lightly dredge the chops on all sides in flour. In a lidded skillet large enough to hold all 6 chops, heat the oil and 3 tablespoons of the butter. Brown the chops on all sides, 8 to 10 minutes total.

1 medium onion, diced

1 pound wild mushrooms, cleaned and sliced

2 cups Homemade Chicken Stock Homemade Chicken Stock, or low-sodium canned
1 cup heavy cream
Salt and freshly ground black pepper
2 pounds Yukon Gold potatoes, peeled and cut into large pieces
3/4 cup milk

Mesclun greens, for garnish

Steps:

  • Heat 1 tablespoon butter and the oil in a large saute pan over medium-high heat. Add veal chops, and sear until golden, 5 to 6 minutes per side. Transfer to a plate, and keep warm.
  • Add the onion and garlic to the pan, and saute until softened, about 5 minutes. Add the mushrooms, and cook, tossing occasionally, until they have released all of their juices and most of the liquid has evaporated. Add the wine, and cook, scraping up any browned bits from the bottom of pan with a wooden spoon, until the liquid has evaporated, about 2 minutes. Stir in the stock and cream, return chops to pan, and bring to a boil. Reduce heat, cover, and simmer gently 30 minutes. Continue cooking, uncovered, until meat is very tender and sauce has thickened, 20 to 25 minutes. Season with salt and pepper.
  • Meanwhile, place potatoes in a large saucepan of cold, salted water, and bring to a boil. Reduce heat, and simmer gently until tender, about 15 minutes. Drain; pass potatoes through a potato ricer, and return to saucepan. Stir in the remaining 2 tablespoons butter and the milk, and season with salt and pepper. Cover, and set aside until ready to serve.
  • Pour warm sauce over the chops and mashed potatoes, and serve with greens on the side.

4 veal chops, 3/4" thick, tied to compact meat, bones frenched, trimmings saved
1/2 cup Port wine

3 cloves garlic, minced
Dash of hot sauce

Sauce:
2 Tbs olive oil
1/2 onion, chopped

1 Tbsp butter, softened

  • Combine marinade ingredients in a bowl big enough to hold all 4 chops. Add chops to marinade, and add water to almost cover chops. Cover with plastic wrap and marinade overnight. For the Port Sauce: Add olive oil to large skillet, heat over medium heat. Add onion, rosemary leaves and a good pinch of kosher salt, saute until onion begins to softened. Add veal trimmings and bacon and brown thoroughly. Add garlic, and combine until fragrant. Add port and stock and bring to a boil. Reduce heat and simmer for 45 minutes. Meanwhile, remove chops from the marinade. Scrape off any solids, and pat chops dry. Drizzle chops with a small amount of olive oil and season with salt and pepper. Preheat an indoor or outdoor grill to medium high. Grill veal chops for 6-8 minutes per side. Rest for 5 minutes. To finish sauce, remove from heat and strain sauce. Return to pan and bring to a simmer over medium heat and reduce sauce to about 1/2 (your looking for a thicker consistency). When reduced, add cheese and stir to melt into sauce. Remove from heat, add butter and taste for seasoning.
