This is my favorite vegan dessert recipe. I got it from "American Vegetarian Cookbook" by Marilyn Diamond. Sometimes I throw health concerns out the window and use corn syrup instead of honey. Live dangerously, right?

With age, we thought of eating less and less eggs and milk, but we still like cakes, so a vegan recipe was found and adapted and some chocolate around the house was added. And, it became the most moist chocolate cake we've ever had. Next time we'll try it without the chocolates.

Tips:

  • To ensure the batter is smooth and lump-free, use a blender or food processor to combine the ingredients.
  • For an extra rich and gooey chocolate cake, use a combination of melted dark chocolate and cocoa powder.
  • If you don't have a bundt pan, you can use a regular 9-inch round cake pan. Just be sure to adjust the baking time accordingly.
  • To check if the cake is done, insert a toothpick into the center. If it comes out clean, the cake is ready.
  • Let the cake cool completely before frosting it. This will help the frosting set properly.
  • For a decadent chocolate ganache frosting, simply heat equal parts chocolate and cream until melted and smooth.
  • Get creative with your toppings! Try chopped nuts, fresh fruit, or a sprinkle of powdered sugar.
