1 strip kombu
8 cups water
2 tablespoons olive oil

The cooked black-eyed peas
1 cup reserved broth from the beans

Tips:

  • Use fresh, high-quality ingredients: This will ensure that your Hoppin' John is packed with flavor. Look for fresh black-eyed peas, bell peppers, onions, and celery.
  • Soak the black-eyed peas overnight: This will help to soften them and reduce the cooking time. If you don't have time to soak them overnight, you can quick-soak them by boiling them in water for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Cook the Hoppin' John slowly: This will allow the flavors to develop and meld together. Simmer the Hoppin' John for at least 1 hour, or until the black-eyed peas are tender.
  • Season the Hoppin' John well: Don't be afraid to add plenty of salt, pepper, and other spices to your Hoppin' John. This will help to bring out the flavors of the dish.
  • Serve the Hoppin' John with your favorite sides: Hoppin' John is traditionally served with rice, collard greens, and cornbread. However, you can also serve it with other sides, such as mashed potatoes, roasted vegetables, or a salad.

Conclusion:

Hoppin' John is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover black-eyed peas, and it is also a healthy and affordable meal. So next time you are looking for a quick and easy vegan recipe, give Hoppin' John a try. You won't be disappointed!
