Steps:

1/4 cup olive oil
1 tablespoon lemon juice
2 cloves garlic
1/2 teaspoon dried thyme
1 teaspoon sea salt

1 to 2 tablespoons water
4 tablespoons olive oil
1 onion, thinly sliced

2 cups butternut squash, peeled and cut into 1/2-inch cubes
1/2 cup spinach
1 apple, peeled and thinly sliced
Pizza dough (store-bought is fine, or make your own)

Steps:

  • Preheat oven to 375 degrees. Make the garlic white bean purée by blending the beans, oil, lemon juice, garlic, thyme, salt and pepper in a food processor. Add water, as needed, until a smooth consistency forms. Set aside. Can be made two days in advance.
  • In a large skillet, heat 2 tablespoons oil over medium-low heat and sauté onions until soft and lightly caramelized, about 15 minutes. Season generously with salt and pepper.
  • While the onions are cooking, toss remaining 2 tablespoons oil with squash and season generously with salt and pepper. Transfer to a large-rimmed baking sheet and roast for 30 to 35 minutes until squash is fork-tender, turning once or twice with a spatula. Remove from oven and set aside. Turn heat up to 450 degrees.
  • Prepare pizza. Brush a large-rimmed baking sheet (approximately 9 by 13 inches) with oil. Stretch homemade or store-bought pizza dough into a rectangle and fit it into the prepared baking sheet (You can also use a 14-inch or 16-inch round pizza pan if you have one). Spread a layer of the garlic white bean purée evenly over the rolled-out dough. (You may not want to use all of it.) On top of the dough, arrange the spinach, caramelized onions, roasted butternut squash and apple slices. Season with salt and pepper, and brush the edges of the crust with olive oil.
  • Bake at 450 degrees for about 15 to 20 minutes, rotating midway, until the crust is slightly browned or golden. Let cool, slice and serve.

1 cup cashews
1 cup water
1 tablespoon nutritional yeast
1/4 teaspoon salt
1 teaspoon apple cider vinegar
2 garlic cloves, peeled
1 tablespoon tapioca starch
4 cups and 2 tbsp all-purpose flour
1 1/3 cups water
1 teaspoon yeast
1 teaspoon salt
1.5 (14 ounce) cans chopped tomatoes
1 tablespoon balsamic vinegar
1 pinch salt
1 teaspoon dried oregano
1 tablespoon olive oil, plus more for drizzling
fresh basil, to serve

Steps:

  • For the mozzarella:.
  • Soak the cashews in water overnight or place in a pot of boiling water and boil on the stove for 15 minutes to soften. Drain.
  • Add the soaked cashews to the jug of a high speed blender along with the rest of the mozzarella ingredients. Blend until completely smooth.
  • Pour into a medium pot and place on the stove over a medium-low heat. Cook until thickened, about 5-10 minutes, then pour into a bowl and set aside - this will thicken as it cools.
  • For the pizza dough:.
  • Mix the water and yeast in a large bowl. Let sit for 10 minutes to activate the yeast then pour in the flour and salt. Stir to get a shaggy dough. Pour a bit of oil into the bowl then lift up the dough and turn it over to coat it completely in oil. Cover with a damp towel and leave somewhere warm for 2-3 hours until doubled in volume.
  • For the tomato sauce:.
  • In a bowl, combine the tomato sauce ingredients. Stir together and set aside.
  • To make the pizzas:.
  • Split the dough into quarters and roll into balls - set aside for 30 minutes to rest, this will make the dough easier to work with.
  • Lightly flour a countertop and place a ball of dough onto it. Dust with more flour. Use your hands to pat the dough down and then roll out into a large circle about 1/4-inch thick. You can use your hands to help gently stretch the dough until it's thin enough. Transfer the circle of dough to a baking sheet and bake for 5 minutes until golden. Repeat with the rest of the dough so all your bases are baked.
  • Spread a few tablespoons of tomato sauce onto each pizza base. Top with dollops of the 'mozzarella' and drizzle with olive oil. Sprinkle on some salt and black pepper then place each pizza back into the oven, one at a time, for 5-10 minutes until the crust is golden and the 'cheese' is starting to brown. Top with fresh basil and serve immediately.

  • Place cashews into a pot with water to cover; bring to a boil. Reduce heat to medium-low and simmer until soft, about 15 minutes. Drain.
  • Puree boiled cashews, 1 1/4 cups fresh water, tapioca starch, nutritional yeast, cider vinegar, 1/2 teaspoon salt, and 1/4 teaspoon garlic powder in a blender. Pour puree into a saucepan over medium heat. Cook, stirring continuously, until thickened, about 5 minutes.

1 tablespoon flour
1 teaspoon curry powder
120 ml soymilk
1 pizza crust (pre-prepared and vegan friendly or make your own)

1 teaspoon crushed garlic
100 g sweet potatoes (peeled and sliced 2mm thin)
2 tablespoons chickpeas (cooked, drained and rinsed)
red onion (two thin rings, seperated)
handful rocket
1/2 red capsicum (bell pepper, sliced and diced)
1 tablespoon coriander (chopped finely)
1/4 fresh chili pepper (optional, sliced thinly)

Steps:

  • TO MAKE CURRY SAUCE.
  • Melt margarine in a small saucepan and remove from stove.
  • Stir in flour and curry powder until smooth.
  • Return to stove and gradually add the soy milk, stirring continuously until thickened. Place to the side.

  • Pre-heat oven to 230°C.

This pizza is so delicious and pretty to serve that my guests always love this pizza and don't feel it's missing anything by being vegan. I used Sue L's Recipe #104173 and our Recipe #252423 for the crust. Preparation and cooking time includes time to make Recipe #252423 for the pizza.

2 medium prepared pizza crust, I used Healthy Italian Breadsticks or Pizza Crust - see description above
15 ounces pizza sauce, I used Pizza Sauce
1/4 cup pesto sauce
3 cups vegan mozzarella cheese (I use Lisanatti's Almond Mozzarella style cheese but you can use something like Veggie Shreds Mozzar) or 3 cups vegan mozzarella cheese (I use Lisanatti's Almond Mozzarella style cheese but you can use something like Veggie Shreds Mozzar)
1/2 cup yellow tomatoes, sliced
1/2 cup tomatoes, sliced (I like to use cherry tomatoes)
1 yellow squash (you can even use both zucchini and squash if you want) or 1 -2 zucchini, cut into 1/8-inch rounds (you can even use both zucchini and squash if you want)
1/2 cup red onion, sliced
1/2 small orange bell pepper, diced
6 fresh mushrooms, sliced (optional)
black olives (optional)
red pepper flakes (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • If using Recipe #252423 for the crust, wait until the crusts have baked for 20 minutes and then add and arrange all of the toppings (if using a different pizza crust, then follow the directions for that pizza crust).
  • Spread pesto sauce and then pizza sauce over pizza dough. Sprinkle half of the vegan cheese all over sauce. Arrange tomatoes, and yellow squash or zucchini, over pizza. Scatter onion and bell pepper over vegetables. Sprinkle on the other half of the vegan cheese. Scatter on mushrooms, olives, and sprinkle with red pepper flakes, if desired.
  • Put the pizza back in the oven to cook for about 10 more minutes.

Scrumptious as is, but you can also make individual size pizzas and add gouda or mozzarella for the cheese-eaters and cooked, crumbled sausage for the carnivores. Win!

4 cups cubed butternut squash (approx 1/2 of a medium 3-pound squash)
2 tablespoons extra virgin olive oil
1 medium clove garlic (peeled)
1 tablespoon nutritional yeast flakes
1 teaspoon Dijon mustard
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
Pinch red pepper flakes
1/2 teaspoon kosher salt + more to taste
1/8 teaspoon freshly ground black pepper + more to taste
1 pound 16 ounces homemade or store-bought pizza dough (I like Trader Joe's garlic & herb crust for this recipe)
1 batch butternut squash sauce
2 medium apples (I like Granny smith; for the pizza photographed, I used a Jonagold and a Granny Smith, cored and thinly sliced)
1/2 small red onion (thinly sliced)
1/3 cup pecans (chopped)
2 tablespoons olive oil
A couple pinches of kosher salt or sea salt
A few leaves fresh thyme (optional)

Steps:

  • Preheat oven to 450 degrees Fahrenheit.
  • Make the sauce. Fill a large saucepan halfway full of water and set over high heat. Add butternut squash. Bring to a boil and cook until fork-tender, 6-7 minutes.
  • Drain squash in a colander and let cool for a couple of minutes. Add to the pitcher of a high-speed blender or the bowl of a food processor fitted with the S-blade. Add the remaining ingredients and puree until smooth. If the sauce needs to be thinned out a bit, add some more olive oil, about a teaspoon at a time.
  • Spread the dough into your desired shape and thickness on a cookie sheet or pizza stone. Add butternut squash sauce and spread with a spoon. Layer with apples, then onions, then pecans. Drizzle with 2 tablespoons olive oil and sprinkle a couple pinches of salt over the top.
  • Bake until the crust is golden and cooked through, the apples and onion are tender, and the pecans are toasted but not burned, about 10 minutes.
  • Top with fresh thyme if desired. Cut into wedges and serve.

1 pound 16 ounces homemade or store-bought pizza dough (I'm on a Trader Joe's whole wheat kick)
1 1/2 cups fresh corn kernels (cut from 2 medium ears of corn, divided)
2 medium cloves garlic (minced)
2 tablespoons olive oil + more for brushing pan and crust
1/4 cup full-fat coconut milk
1/8 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1 small white onion (sliced and rings separated)
1/2 pint cherry tomatoes or 2 medium ripe tomatoes (sliced thin)
1/2 cup fresh basil

Steps:

  • Preheat the oven to 450 degrees Fahrenheit. Brush a large cookie sheet lightly with olive oil or prepare a pizza stone. Roll or pull the dough into an approximately 14-inch diameter circle. Brush entire crust with olive oil.
  • Place 1 cup corn, 2 tablespoons olive oil, garlic, coconut milk, 1/8 teaspoon salt, and pepper in the pitcher of a blender or in a food processor fitted with the S-blade. Blend until nearly smooth but with a bit of remaining texture from the corn.
  • Pour sauce on pizza dough and spread in an even layer, leaving a 1/2-inch border. Layer on the onions, then the tomatoes, and then sprinkle on the remaining corn. Bake until the crust is golden brown and the toppings are bubbly, 8-12 minutes. Remove from oven and top with basil and a couple of pinches of kosher salt, if desired. Slice and serve.
