1.5 lbs baby yellow potatoes (or potatoes of choice)
1 cup plant-based mayo
2 tbsp white vinegar
1 tbsp yellow mustard
3/4 cup celery (chopped)
2-3 green onions (chopped)
1 kosher dill pickle (chopped)
salt and pepper (to taste)

Steps:

  • Place potatoes in a large pot and cover with water. Place pot on the stove over high heat and cover. Bring to a boil and then lower heat to a simmer. Cook until potatoes are slightly fork tender* and drain. Leave potatoes in the colander and cover with a clean kitchen towel to steam for 15 minutes. Uncover and allow to cool for an additional 15 minutes.
  • While potatoes are cooking, make the dressing. Add mayo, vinegar, mustard, celery, green onions, dill pickle and pepper to a large bowl. Stir to combine, cover and place in the fridge until ready to use.
  • When potatoes are cool enough to handle, cut into quarters**. Add potatoes to the dressing and fold them in. Taste and add salt to taste and adjust any seasonings as needed.
  • Place in the fridge until completely cool - at least 1 hour.

10 oz shiitake mushroom, thinly sliced
2 tablespoons olive oil
1 tablespoon maple syrup
2 tablespoons low sodium soy sauce
¾ teaspoon kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon McCormick® Smoked Paprika
2 lb red potato, scrubbed, cut into 1/2 (1.2 cm) in pieces
¼ cup cold water, plus more as needed
1 teaspoon kosher salt, plus more for boiling potatoes
¾ cup raw, unsalted cashews, soaked for 4-12 hours, drained
2 tablespoons apple cider vinegar
2 teaspoons maple syrup
2 cloves garlic
1 cup red onion, finely chopped
2 cups fresh vegetables, such as carrots, celery, zucchini, red bell peppers, sugar snap peas, and/or fennel
½ cup fresh parsley, plus more for garnish, minced
¼ cup fresh dill, plus more for garnish

Steps:

  • Make the mushroom bacon: Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper or a nonstick baking mat.
  • In a medium bowl, toss the mushrooms with the olive oil, maple syrup, soy sauce, salt, black pepper, and smoked paprika until well coated. Spread the mushrooms in an even layer on the prepared baking sheet.
  • Bake the mushrooms for 35-40 minutes until darkened and most of the moisture has been cooked out. Increase the oven temperature to 375°F (190°C) and bake for 10-12 minutes more, until the mushrooms are dried out, but still flexible.

Salt and freshly ground black pepper
2 bunches scallions, trimmed
1/3 cup extra-virgin olive oil, plus more for drizzling
2 tablespoons freshly squeezed lemon juice, plus more as needed
1 to 2 garlic cloves, finely grated
1 teaspoon ground cumin
1/4 cup tahini
Ice water, as needed
1/2 cup soft herbs, such as cilantro, parsley, mint, dill or a combination

2 cloves garlic, minced
⅓ cup lemon juice, or more to taste
