5 russet potatoes, peeled and cut into 1-inch cubes
½ cup vegan mayonnaise
½ cup soy milk
¼ cup olive oil
3 tablespoons vegan cream cheese substitute (such as Tofutti ®)
2 teaspoons salt
1 tablespoon vegetable oil
1 large yellow onion, chopped
2 carrots, chopped
3 stalks celery, chopped
½ cup frozen peas

1 pinch ground black pepper to taste
1 (14 ounce) package vegetarian ground beef substitute
½ cup shredded Cheddar-style soy cheese

Tips:

  • To make your filling heartier, add lentils or crumbled tofu.
  • For a smoky flavor, roast your vegetables before adding them to the filling.
  • Use a variety of vegetables in your filling for a more colorful and nutritious dish.
  • If you don't have vegetable broth, you can use water instead.
