Time 1h

Yield 4

Number Of Ingredients 8

½ cup teriyaki sauce
1 ½ pounds sashimi grade tuna steaks
2 tablespoons extra virgin olive oil
1 lemon
1 tablespoon sesame seeds
2 teaspoons sea salt
ground black pepper to taste
1 carrot, grated

Steps:

  • Pour the teriyaki sauce into a shallow dish or bowl, and place tuna steaks in the sauce to marinate. Cover, and allow to marinate for about 45 minutes at room temperature. The steaks will cook more evenly if they are not cold.
  • Heat olive oil in a large skillet over medium heat. Place tuna steaks in the hot oil, and pour in the teriyaki sauce. Squeeze juice from the lemon over the steaks, and sprinkle with sesame seeds. When the bottom is light brown, flip the steaks, and cook until browned on the other side. The center will still be slightly red. Season with sea salt and pepper.
  • Place the tuna steaks onto serving plates, and garnish with grated carrots. Serve the pan drippings as a dipping sauce.

AHI TUNA WITH VEGETABLE STIR-FRY

Ahi Tuna With Vegetable Stir-Fry image

I've had this recipe at the Canoe House Restaurant and it is wonderful. Here's a little bit about the dish and the restaurant. At the Mauna Lani Bay Hotel on Hawaii's Kohala coast, CanoeHouse chef Pat Saito uses ono steaks (a type of mackerel) for this dish. Ahi tuna, which is easier to find, makes a good substitute. Saito serves the fish with wasabi-laced mashed potatoes.

10 pieces shiitake mushrooms
1 (7 ounce) can chunk tuna, drained
1 1/2 tablespoons sesame oil

  • Add the garlic and stir it around a little.
  • Add the drained tuna and stir around.
  • Add the mushrooms and stir in with the tuna.

TUNA TERIYAKI STIR-FRY

Tuna Teriyaki Stir-Fry image

Stir-fry fresh albacore tuna, plump sugar snap peas, and thin slices of green onions, carrot, and red bell pepper, then serve over brown rice.

Yield Serves 4; 1 cup tuna and vegetable mixture and 1/2 cup rice per serving

Number Of Ingredients 13

1 cup uncooked instant brown rice
1/4 cup water
2 tablespoons teriyaki sauce (lowest sodium available)
1/2 teaspoon cornstarch
1/2 teaspoon toasted sesame oil
1 teaspoon canola or corn oil
4 tuna steaks (about 4 ounces each), rinsed and patted dry, cut into 3/4-inch cubes
2 medium garlic cloves, minced
1 teaspoon grated peeled gingerroot
4 ounces sugar snap peas, trimmed
4 medium green onions, thinly sliced
1 medium carrot, thinly sliced
1/2 medium red bell pepper, thinly sliced

Steps:

  • Prepare the rice using the package directions, omitting the salt and margarine. Cover to keep warm. Set aside.
  • Meanwhile, in a small bowl, whisk together the glaze ingredients. Set aside.
  • In a large nonstick skillet, heat the oil over medium-high heat, swirling to coat the bottom. Cook the fish, garlic, and gingerroot for 3 to 4 minutes, or until the fish is golden brown on all sides (it will still be slightly pink inside), stirring constantly.
  • Stir in the sugar snap peas, green onions, carrot, and bell pepper. Cook for 2 to 3 minutes, or until the vegetables are tender-crisp, stirring constantly.
  • Make a well in the center of the fish and vegetables. Pour in the glaze mixture. Simmer for 1 to 2 minutes, or until the glaze is thickened, stirring occasionally in the well only. Stir the fish and vegetables into the thickened glaze. Cook for 1 minute, or until the mixture is heated through, stirring constantly. Serve over the rice.

Tips:

  • Mise en place: Before you start cooking, make sure you have all your ingredients prepped and your cooking tools within reach. This will help you stay organized and avoid scrambling during the cooking process.
  • Use high-quality ingredients: The fresher and higher quality your ingredients are, the better your stir-fry will taste. Look for fresh vegetables, firm tofu, and high-quality ahi tuna.
  • Use a well-seasoned wok or skillet: A well-seasoned wok or skillet will help prevent the food from sticking and will give your stir-fry a nice smoky flavor.
  • Cook the vegetables and tofu separately: This will help ensure that each ingredient is cooked properly. Cook the vegetables until they are tender-crisp and the tofu until it is slightly browned and crispy.
  • Use a flavorful sauce: The sauce is what will bring all the flavors of the stir-fry together. Use a sauce that is flavorful and has a good balance of sweet, sour, and salty flavors.
  • Add the ahi tuna last: Ahi tuna cooks very quickly, so it should be added to the stir-fry at the very end. Cook it just until it is seared on the outside and still rare or medium-rare on the inside.

Conclusion:

Vegetable stir-fry with shiitake and ahi tuna is a delicious and healthy meal that can be made in just 30 minutes. This dish is packed with fresh vegetables, protein-rich tofu, and flavorful ahi tuna. The stir-fry sauce is made with a combination of soy sauce, rice vinegar, ginger, and garlic, and it adds a delicious umami flavor to the dish. This stir-fry is a great way to get your daily dose of vegetables and protein, and it's also a great meal for entertaining guests.
