  • In a large skillet or saucepan, saute celery and onion in 2 tablespoons butter until tender. Remove from the heat. 15 jarred grape leaves (optional)
3 cups low-sodium chicken broth
1 1/2 cups wild rice blend
6 tablespoons unsalted butter
1 large shallot, minced
1 clove garlic, minced
3/4 teaspoon ground ginger
3/4 teaspoon ground cumin
3/4 cup pomegranate seeds, plus more for serving
2 tablespoons chopped fresh parsley, plus sprigs for serving
2 tablespoons chopped fresh cilantro, plus sprigs for serving
3 large egg yolks
3/4 cup fresh orange juice
1 tablespoon pomegranate molasses

Steps:

  • Mix the cinnamon, 4 teaspoons salt and 1/2 teaspoon pepper in a bowl; sprinkle all over the hens and inside the cavities. Place the hens on a rack set on a rimmed baking sheet and refrigerate, uncovered, at least 2 hours or overnight. Meanwhile, soak the grape leaves in water 1 hour.
  • Bring the chicken broth and 2 cups water to a boil in a saucepan; add the rice blend and cook as the label directs. Drain and rinse under cold water.
  • Preheat the oven to 400 degrees F. Melt 4 tablespoons butter in a large skillet over medium-high heat. Add the shallot, garlic, ginger and cumin and cook, stirring, until soft, about 3 minutes. Remove from the heat; add the cooked rice, pomegranate seeds, and chopped parsley and cilantro; toss to coat. Season with salt and pepper. Add the egg yolks and stir to combine.
  • Make the glaze: Bring the orange juice and pomegranate molasses to a boil in a small skillet over medium heat. Cook until reduced by half, about 5 minutes. Remove from the heat and swirl in the remaining 2 tablespoons butter.
  • Fill the cavity of each hen with about 1/2 cup of the rice mixture (reserve the rest); tie the legs together with twine. Roast 20 minutes, then brush with the pomegranate glaze. Continue roasting, glazing every 10 minutes, until a thermometer inserted into the thigh registers 165 degrees F to 170 degrees F, 1 hour to 1 hour, 10 minutes.   • Meanwhile, drain the grape leaves and pat dry. Use some of the leaves to line a 9-inch pie dish. Fill with the reserved rice mixture and drizzle with 2 tablespoons water. Cover with the remaining grape leaves, shiny side up, then cover with foil. (If you aren't using grape leaves, spoon the rice into a pie dish, sprinkle with water and cover with foil.) After the hens have roasted about 20 minutes, transfer the rice to the oven and cook until heated through, about 45 minutes.
  • Transfer the hens to a platter and add some parsley and cilantro sprigs and pomegranate seeds. Peel the grape leaves off the top of the rice and serve alongside the hens.

⅓ cup uncooked wild rice
1 cup water
1 cube chicken bouillon

2 Cornish game hens
½ cup melted butter
½ onion, chopped
½ stalk celery, chopped
¼ green bell pepper, chopped
1 (4.5 ounce) can mushrooms, drained and chopped

6 x 1 1/4 lbs Cornish hens
3 tablespoon olive oil -- plus more for drizzling over the hens
1 small yellow onion -- peeled and finely chopped (5 oz.)
2 small carrots -- peeled and shredded (4 oz.)
1 large celery rib -- finely chopped
1 1/2 teaspoon salt -- plus more for seasoning the hens
1/2 teaspoon black pepper -- plus more for seasoning the hens
1 medium zucchini -- trimmed and shredded (8 oz.)
1 small sweet potato (yam) -- peeled and shredded (8 oz.)
1 small baking potato -- peeled and shredded (11 oz.)
2 large garlic cloves -- crushed
1 tablespoon fresh ginger -- finely minced
2 garlic cloves -- crushed

Once they're all stuffed, drizzle a little olive oil over each of them and rub the oil over them. Season with salt and pepper. Roast for 40 minutes. While the hens are roasting, mix all of the glaze ingredients together in a small bowl. After 40 minutes, brush each hen generously with the glaze. Roast another 10 minutes, then glaze again and roast another 10 minutes. Stick the point of a knife into the leg joint -- if the juices run clear, the hens are done. Let them rest for 5 minutes, then serve. If they need a little more cooking, baste with the juices then roast another 5-10 minutes, until the juices run clear.

About 1/4 to 1/3 cup fresh bread crumbs

1 rock Cornish game hen, about 1 and 1/2 pounds in weight
Olive oil
Salt and freshly ground black pepper
Serving suggestions: bread and 1 or 2 vegetable purees

Steps:

  • Preheat oven to 450 degrees. In a small mixing bowl, combine basil, garlic, ricotta cheese and soft bread crumbs; bind the ingredients together with egg yolk.
  • With heavy shears, cut each bird along one side of backbone and remove as much fat as possible. Cut backbone away; insert your fingers under the skin covering the breast and top of drumsticks. Loosen skin as much as possible and insert some stuffing between flesh and skin. Set bird halves, breast side up in a baking pan; rub olive oil over the skin and season with salt and pepper.

Add onion, 1 tblsp sage and 1 tblsp thyme and saute until onion is osft. Add onion mixutre to toasted croissants. Mix in 1/4 cup chicken stock and hazelnuts. Season stuffing to taste with salt and pepper. 2. Spoon 1/4 of stuffing into each hen. Mix shallots, olive oil and remaining thyme in small bowl. Rub mixture all over outside of hens. Tie legs together with string to hold shape. Arrange hens on large rimmmed bkaing hseet. Bake until golden brown and cooked through about 1 hour and 15 minutes. Arrange hen on platte. Tent with foil. 3. Scrape pan juice into large measuring cup. Spoon off fat, reserving 1 tblsp add enough chicken stock to degreased pna juices to measure 2 cups liquid. Pour liquid into medium saucepan. Mix reserved 1 tblsp fat and 1 tblsp flour int small bowl to form smooth paste; whisk into stock mixture. Boil until reduced to generous 1 cup about 8 minutes. Season grave to taste.

1 tablespoon mayonnaise or 1 tablespoon salad dressing
