2 medium onions, sliced
Kosher salt and freshly ground black pepper
3 large zucchini, sliced in half lengthwise, then thinly sliced into half circles
1 teaspoon herbes de Provence (or just basil, oregano, and marjoram)

Steps:

  • In a large saute pan, heat the olive oil over medium-high heat. Add the onions, season with salt and cook 2 to 3 minutes, stirring to avoid any burning. Add the zucchini, herbes de Provence, and salt, and pepper, to taste and cook an additional 5 minutes, using a wooden spoon or spatula to keep the vegetables from overbrowning. Reduce the heat to low, add a little more oil if needed and let cook for 20 to 30 minutes, stirring occasionally. 3 cups broccoli florets
2 medium carrots, diagonally sliced
1 large red bell pepper, cut into short, thin strips
1/2 cup water
1/4 cup water
2 teaspoons cornstarch
1 teaspoon sugar
1/3 cup unsweetened pineapple juice
1 tablespoon soy sauce
1 tablespoon rice vinegar
1/2 teaspoon dark sesame oil
1/4 cup diagonally sliced green onion

Steps:

  • Add 1/2 cup water to large skillet with a tight-fitting lid and bring to a boil over high heat.
  • Add carrots, cover and steam for 4 minutes.
