Reduce heat, cover and simmer until vegetables are tender, about 12 minutes. Discard cinnamon stick. (Can be prepared 2 days ahead. Cool, cover and refrigerate. Rewarm before serving.)
- Garnish with cilantro and serve.
Tips:
- Prep Your Vegetables: Before you start cooking, wash and chop your vegetables into uniform pieces. This will ensure they cook evenly.
- Use Good Quality Onion: The type of onion you use will greatly impact the flavor of your sauce. Choose a sweet onion, such as a Vidalia or Walla Walla, for a milder flavor. If you prefer a more pungent onion flavor, go for a yellow or white onion.
- Cook the Onions Properly: The onions are the base of the sauce, so it's important to cook them until they are soft and translucent. This will take about 10-15 minutes over medium heat. Don't rush this step, as undercooked onions will make your sauce bitter.
- Add Flour or Cornstarch: To thicken your sauce, you can add a small amount of flour or cornstarch. Whisk the flour or cornstarch into a small amount of milk or water until it forms a smooth paste. Then, slowly whisk the paste into the sauce until it reaches your desired consistency.
- Season to Taste: Once your sauce is thickened, season it to taste with salt, pepper, garlic powder, and onion powder. You can also add a pinch of cayenne pepper or red pepper flakes for a little heat. Taste the sauce as you go and adjust the seasonings until it's perfect.
- Serve Immediately: Creamy onion sauce is best served immediately after it's made. It will thicken as it cools, so if you're making it ahead of time, be sure to reheat it gently before serving.
Conclusion:
With its creamy, flavorful sauce and tender vegetables, this vegetable medley in creamy onion sauce is a delicious and versatile dish. It's perfect for a weeknight dinner or a special occasion. Serve it over rice, pasta, or mashed potatoes, or use it as a dip for vegetables or crackers. No matter how you choose to enjoy it, this dish is sure to please everyone at the table.
