1 (15-ounce) can baby corn, rinsed and drained
1 Thai chile, such as prik kee noo, or 1 serrano chile, stemmed and thinly sliced*
5 sprigs Thai basil, with stems, plus 1/4 cup chopped *
3 kaffir lime leaves*
1 tablespoon fish sauce

  • In a large saucepan, bring the coconut milk and curry paste to a boil over medium-high heat, stirring constantly until smooth, about 1 minute. Serve over a big scoop of rice and garnish with peanuts, cilantro, and raisins.

2 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons curry paste, or more to taste
1 dried red chile pepper
1 medium onion, chopped
1 (12 ounce) package firm tofu, drained and cubed
2 small potatoes, cubed
2 medium carrots, chopped
2 stalks celery, chopped
salt and ground black pepper to taste
2 (14 ounce) cans coconut milk
1 cup milk, or more to taste
2 medium zucchini, chopped
1 (16 ounce) bag fresh spinach

1 (16 ounce) package firm tofu, cubed
2 tablespoons vegetable oil
1 (14 ounce) can coconut milk, divided
2 tablespoons yellow curry paste
1 cup vegetable broth, or more as needed
2 medium potatoes, peeled and cubed
1 cup chopped carrots
¾ cup chopped green bell pepper
¾ cup snow peas

Steps:

  • Press tofu cubes between towels to drain excess water.

1/3 cup peanut oil
4 tablespoons yellow curry paste, for medium-hot dish
2 cloves garlic, finely chopped
2 (14 ounce) cans coconut milk

1 large onion, coarsely chopped
1 red bell pepper, seeded and cut in strips
