This my version of a popular soup served at a well-known banquet facility in southeastern Massachusetts. It is simple to prepare using common ingredients you may already have on hand in your pantry and freezer. Feel free to vary the basic recipe with in-season fresh veggies and low-fat turkey or veggie-soy burger for the ground beef.

1 pound ground beef
1 small onion, minced
1 teaspoon minced garlic
½ (6 ounce) can tomato paste
1 (28 ounce) can crushed tomatoes
1 envelope onion soup mix
2 beef bouillon cubes
1 bay leaf
1 (16 ounce) package frozen mixed vegetables
2 quarts water
⅔ cup orzo pasta
salt and ground black pepper to taste

Steps:

  • Cook the ground beef in a large pot over medium heat until completely browned, 7 to 10 minutes. Drain as much fat from the beef as possible. Add the onion and garlic to the beef; cook and stir until the onion is softened, about 5 minutes.
  • Add the tomato paste, crushed tomatoes, onion soup mix, beef bouillon cubes, bay leaf, mixed vegetables, and water to the ground beef mixture. Raise heat to medium-high, and bring the mixture to a boil. Stir the orzo pasta into the boiling liquid; cook until the orzo is tender, about 10 minutes. Season with salt and black pepper to serve.

1 lb ground beef
2 (14 ounce) cans condensed chicken broth
2 (14 ounce) cans water (use empty broth cans)
4 cups water
1 (1 1/4 ounce) envelope Lipton French Onion soup mix
1 (14 ounce) can diced tomatoes
1 (12 -16 ounce) bag frozen vegetables
1/2 cup small shell pasta (like orzo, stars,alphabets, etc)

Steps:

  • In a large pot brown ground beef, stirring to break up.
  • Drain well.
  • Add broth, onion soup mix, water, tomatoes, bring to a boil, reduce heat simmer 5 minutes, add frozen vegetables, continue to simmer 10 minutes more.
  • Stir in pasta cook about 8 minutes more till pasta is done.
  • This makes a fast, great-tasting soup in no time at all--freezes well.

1 -1 1/4 lb ground beef
1 (32 ounce) box chicken broth
4 cups water
1 (1 1/4 ounce) envelope French onion soup mix
1 (14 1/2 ounce) can diced tomatoes
2 -3 stalks celery, chopped
1 (16 ounce) bag frozen mixed vegetables
2/3 cup small shell pasta (or other small pasta)
1 tablespoon Worcestershire sauce
1 dash hot pepper sauce

Steps:

  • In a large pot brown ground beef.
  • Drain fat.
  • Add broth, water, celery, soup mix and tomatoes.
  • Bring to a boil, reduce heat and simmer for about 5 minutes.
  • Add pasta and frozen vegetables, along with worcestershire sauce and hot pepper sauce, and cook for 10 minutes more.
  • Serve with parmesan cheese, if desired.
