EASY, RICH CHOCOLATE PUDDING

Easy, Rich Chocolate Pudding image

This comes together in about the same time it takes to make pudding from a box and tastes infinitely better. It's my slightly lower-fat version of the Chocolate Pudding in the Best Recipe Cookbook. You can use more or less high-fat dairy products as you wish, but the richness of the final product will be affected.

Number Of Ingredients 10

2 tablespoons cocoa powder
2 tablespoons cornstarch
2/3 cup sugar
1/4 teaspoon salt
1 cup half-and-half
3 large egg yolks
2 cups 2% low-fat milk
6 ounces semisweet chocolate
1 tablespoon butter
2 teaspoons vanilla extract

Steps:

  • Melt chocolate in a saucepan or in the microwave and allow to cool slightly.
  • Sift cocoa, corn starch, sugar and salt together in a large, heavy-bottomed saucepan.
  • Slowly whisk in the half and half, then the egg yolks, then the milk.
  • Stir in the chocolate (it will look curdled and clumped, but will melt together with cooking).
  • Bring mixture to a boil over medium-high heat, whisking constantly and scraping the sides and bottom of the pot.
  • A splatter screen might be helpful here if your pot is not very deep.
  • As the pudding reaches the boiling point it will darken and thicken.

  • Stir in butter and vanilla.

CREAMY CHOCOLATE PUDDING

This smooth, rich pudding, lower in fat than many recipes, has many variations. For chocolate almond, chocolate rum, or chocolate mint pudding, simply add either 1/4 tsp almond or rum extract, or 2 drops of peppermint extract along with the vanilla. Yum!

Provided by Whisper

Categories     Dessert

Time 15m

Yield 4 serving(s)

Number Of Ingredients 5

2 tablespoons cornstarch
2 tablespoons unsweetened cocoa
1/4 cup sugar
2 cups skim milk
1 teaspoon vanilla extract

Steps:

  • In a medium saucepan, combine cornstarch, cocoa, and sugar.
  • Mix well.
  • Gradually add milk, stirring to dissolve cornstarch and cocoa.
  • Cook over medium heat, stirring, until mixture comes to a boil.
  • Continue to cook 2 to 3 minutes, stirring,.
  • Remove from heat and stir in vanilla.
  • Spoon pudding into 4 custard cups.
  • Chill.

Tips:

  • Use high-quality ingredients: The quality of your ingredients will directly impact the taste of your pudding. Use the best quality chocolate you can find, and make sure your milk and cream are fresh.
  • Don't overcook the pudding: Overcooked pudding will be grainy and thick. Cook it just until it reaches a simmer, then remove it from the heat and let it cool.
  • Chill the pudding before serving: Chilling the pudding allows the flavors to develop and the pudding to set properly. Chill it for at least 4 hours, or overnight.
  • Serve the pudding with your favorite toppings: Chocolate pudding is delicious on its own, but it's even better with toppings like whipped cream, ice cream, or fresh berries.

Conclusion:

Rich, creamy, and decadent, this chocolate pudding is the perfect dessert for any occasion. It's easy to make and can be customized with your favorite toppings. Whether you're serving it for a special occasion or just enjoying it as a weeknight treat, this chocolate pudding is sure to be a hit.
