Apple muffins are a classic breakfast treat that can be enjoyed by people of all ages. They are a good source of fiber, vitamins, and minerals, and they can be a healthy part of a balanced diet. However, many recipes for apple muffins are loaded with sugar, butter, and other unhealthy ingredients. If you're looking for a healthy apple muffin recipe, there are a few things you should keep in mind. First, choose a recipe that uses whole wheat flour instead of white flour. Whole wheat flour is a good source of fiber, which can help you feel full and satisfied after eating. Second, look for a recipe that uses applesauce or mashed apples instead of granulated sugar. Applesauce and mashed apples are both natural sweeteners that don't add any processed sugar to your muffins. Finally, choose a recipe that doesn't contain a lot of butter or oil. Butter and oil are both high in calories and saturated fat, which can contribute to heart disease and other health problems.

APPLE MUFFINS (VERY HEALTHY)

Apple Muffins (Very Healthy) image

This recipe is from the Liver Cleansing Diet by Dr Sandra Cabot. It is very healthy and tastes great. I don't add the sultanas because I don't like them and if I don't have almond oil or soy milk, I use canola oil and fat free milk and they still turn out great.

Time 17m

Yield 12 serving(s)

Number Of Ingredients 9

1 1/2 cups wholemeal self-rising flour
1/2 teaspoon mixed spice
1/2 teaspoon cinnamon
1/2 cup sultana
2 egg whites
2 tablespoons cold-pressed almond oil
1 cup chopped cooked apple
1 tablespoon honey or 1 tablespoon apple juice concentrate
1/2 cup soymilk

Steps:

  • Sift flour and spices and add sultanas.
  • Beat egg whites and add the oil, apple, honey and milk and blend thoroughly. Add to the dry ingredients and stir until thoroughly mixed.
  • Spoon into a lightly greased muffin tin and bake in a moderate oven for 17 minutes or until cooked.

Tips:

  • Use fresh, ripe apples for the best flavor and texture.
  • To make the muffins extra moist, use melted butter or oil instead of solid butter.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to regular milk and let it sit for 5 minutes.
  • Be careful not to overmix the batter, as this can make the muffins tough.
  • Fill the muffin cups only about 2/3 full, as they will rise during baking.
  • Bake the muffins until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Conclusion:

These apple muffins are a delicious and healthy snack or breakfast option. They are made with whole wheat flour, oats, and apples, and are sweetened with honey and maple syrup. They are also low in fat and calories, and are a good source of fiber and protein. Whether you are looking for a quick and easy grab-and-go breakfast or a healthy snack to satisfy your sweet tooth, these apple muffins are the perfect choice.
