EASY OLD FASHIONED MEATLOAF

Easy Old Fashioned Meatloaf image

No fancy ingredients here... Not like we need another meatloaf recipe, but I figured I'd should post my Grandma's for people like me who like a quick easy meatloaf without a lot of fuss. Most of the meatloaves I saw here had things I'd never even consider putting in a meatloaf! :) At times I will substitute the onion with approx. 1/4 cup dried onion flakes. I also have substituted the garlic with garlic powder. I've never tried making it with horseradish. (I was a notoriously picky eater as a kid so I don't think Grandma put it in when I came to visit either.) I usually don't bother beating the egg... (Boy do I sound lazy! Don't tell Mom! LOL!) I've only recently started putting ketchup on the top before baking, so I don't think it's necessary to keep the meatloaf moist. Mom used to use her own dried bread crumbs, but I use the plain storebought kind. I haven't been adventurous enough to try any flavored bread crumbs... Make sure lean ground beef is used otherwise the meatloaf can get too greasy and/or bubble over the pan while baking. I also recommend checking the center to make sure it's done. On occasion it has taken over an hour to bake.

Time 1h15m

Number Of Ingredients 11

2 eggs
3/4 cup milk
1/2 cup fine dry bread crumbs
1/4 cup finely chopped onion
2 tablespoons snipped parsley
1 teaspoon salt
1/2 teaspoon ground sage
1 1/2 pounds ground beef
1/4 cup catsup
2 tablespoons brown sugar
1 teaspoon dry mustard

Steps:

  • First, in a large bowl combine eggs and milk then stir in breadcrumbs. Next add onion parsley, salt, sage, and 1/8 teaspoon pepper. Mix them together a few times then add in the beef and mix well. I suggest using your hands, and this is how I was taught, it mixes faster and better than using a spoon of any kind.
  • Shape your meatloaf into a 'loaf' shape if not using a bread pan, though I suggest you do, or use the mini loaf pan I mentioned above. Then go ahead and bake in a 350-degree oven for 50 minutes. Then make sure to spoon off excess fat.
  • Mix together the ketchup, sugar, and dry mustard, mix it well then spread over the top of the meatloaf.
  • Then return to the oven for 10-15 minutes. This makes about six servings.

GOOD OLD MEATLOAF

Good Old Meatloaf image

I've been making this recipe since the 1970's. It's the first meatloaf I ever made. Occasionally, I like to try other meatloaf recipes but I always go back to this one.

Categories     Meat

Time 55m

Yield 4 serving(s)

Number Of Ingredients 11

1 egg
1/2 cup milk
2 slices bread
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon Worcestershire sauce
1 teaspoon yellow mustard
1 lb extra lean ground beef
1/4 cup onion, minced
1 tablespoon dried parsley flakes
4 tablespoons ketchup

Steps:

  • Preheat oven to 375°F.
  • In a large bowl, beat egg and milk with a fork until well-combined.
  • (If your ground beef has been previously frozen and defrosted, use slightly less milk.).
  • Tear bread into small pieces, and add to the bowl with salt, pepper, worcestershire sauce, and mustard, mix well.
  • Add ground beef, onion and parsley; mix with hands until all liquid in absorbed and ingredients are well distributed. Mixture will be quite loose.
  • Place meat mixture in a shallow casserole about 9 or 10 inches square and shape into a small, rectangular loaf.
  • Spread ketchup over top of meat, and bake for 45 minutes.
  • Remove from oven and let rest 5 minutes before slicing and serving.

Tips:

  • Choose the right meat: A mixture of ground beef and pork is a classic choice for meatloaf, but you can also use ground turkey, chicken, or lamb. If you're using a leaner meat, add some chopped bacon or sausage to help keep it moist.
  • Don't overmix the meat: Overmixing the meat will make the meatloaf tough. Mix the ingredients just until they are combined.
  • Add some moisture: Adding some moisture to the meatloaf will help prevent it from becoming dry. You can add milk, bread crumbs, eggs, or even vegetables.
  • Season the meatloaf well: Don't be afraid to season the meatloaf liberally. You can use a variety of herbs and spices, such as garlic, onion, oregano, thyme, basil, and paprika.
  • Cook the meatloaf at a low temperature: Cooking the meatloaf at a low temperature will help prevent it from drying out. Cook it at 350 degrees Fahrenheit for about an hour, or until it reaches an internal temperature of 160 degrees Fahrenheit.

Conclusion:

Meatloaf is a classic comfort food that is easy to make and always a crowd-pleaser. With a few simple tips, you can make the best meatloaf ever. So next time you're looking for a hearty and satisfying meal, give meatloaf a try. You won't be disappointed.
