- Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
- Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.

- Breading The Wings ~ In small bowl, beat eggs and milk until combined. In separate bowl, mix together flour, paprika, cayenne, black pepper, garlic and onion. Dip chicken wing sections into milk mixture and then into the dry mixture. Place breaded chicken in rows on a large cookie sheet. Sprinkle your rows of wings with remaining flour mixture. Loosely cover with plastic wrap. Refridgerate for at least one hour.
- Wing Sauce ~ Combine hot sauce, butter, cayenne, honey, black pepper and galic into medium saucepan. Cook over medium heat until boil, reduce to simmer. Stir occasionally.
- Deep Fry Chicken ~ Preheat the deep fryer to 375 degrees F. Fry each batch for about 8 minutes (cooking times will vary depending on your fryer). Let wings rest for a minute or so on cookie rack over a paper towel lined tray.
- Saucing The Wings.~ Take fried wings and dip into your "Wing Sauce" in sauce pan simmering, make sure to cover the entire wing. Remove from sauce.
- Sealing The Sauce.~ Preheat oven to 300 degrees F. Line a cookie sheet with aluminum foil. Place your wings with sauce into preheated oven for approximately 10 minutes.
- (You can store these wings in the freezer by wrapping in aluminum foil twice and placing in a freezer bag. You can reheat straight from the freezer ~ just place on foil lined sheet and bake for 10 minutes in oven preheated to 375 degrees F, separate wings at that point and continue baking for about 15 minutes.).
BEST HOT WINGS
I found this on another website as a Hooter's Clone. It really is the best I have ever tasted and a frequent request from my guests. The Franks Red Hot makes the difference. Oh, and heat the sauce over VERY LOW heat or it will seperate. If you let the wings sit for a bit they will become moist an you can do the second breading without the egg wash. Enjoy!

- Combine breading in a bowl or gallon sized ziplock bag, coat chicken with flour mixture. Then dip floured chicken briefly in beaten egg (add a little bit of water to thin slightly) and again dredge in flour. Set aside.
- Gently melt butter in pan, add Franks Red Hot, pepper and garlic powder. Be careful to keep the heat medium to medium low, and do not boil or butter will separate and the mixture will not stay blended. (If that happens, whisk it real quick and carry on anyway).
- Fry chicken in a single layer (9-10 drumettes at a time) in deep fryer at 375°F for 12 - 13 minutes (so they are nice and crispy). Drain briefly in fry basket.
- Pour half of the sauce into a glass container with a tight fitting lid. Dump in the chicken, put on the lid and carefully shake, coating the entire wing with sauce. Remove from container and set on a plate. The breading will absorb the sauce within a minute or so. Serve with celery sticks and either Ranch or Blue Cheese dressing.

- Line a plate with paper towels and have ready. Cut off the very end tips of the chicken wings and discard. Cut the wings in half where the joint bones meet. Make sure the wings are dry. In a bowl, combine the flour, salt and some pepper; add the wing pieces and toss to coat.
- In a large cast-iron skillet or a small stockpot, heat the oil to 350 degrees F on a deep-fat thermometer. Shake off any excess coating from the wings and drop the pieces into the hot oil. Cook for 6 to 8 minutes. With a slotted spoon, remove the wings from the pan to a bowl. Toss with 1/2 cup of the sauce of your choice until evenly coated. Serve immediately.
- Wearing gloves to protect your hands from the chile's volatile oils, remove most of the charred skin and all the seeds from the habanero. In a small saucepan, combine the chile, molasses, honey, ketjap manis, vinegar, tamarind and garlic, and bring just to a boil over high heat.
- Remove from the heat and let cool slightly. Add the ketchup and Dijon mustard to the syrup and pour into a blender and puree, or use an immersion blender to puree right in the pan. Stored in an airtight container, the syrup will last up to 2 months in the refrigerator. Put 1/2 cup of the sauce in a bowl, add the hot fried wings and toss until evenly coated.
- Combine the cornstarch and 1/4 cup water in a small bowl and stir to make a slurry.
- In a large saute pan over medium heat, add the canola oil. Add the green onions, ginger, garlic and black beans, and saute quickly for a couple of minutes. Add the water and cornstarch mixture, vinegar and honey. Stir until the cornstarch starts to thicken the sauce, a minute or two. Add the sesame oil and red pepper flakes if using. Put the sauce in a bowl, add the hot fried wings and toss until evenly coated. Serve hot, sprinkled with the sesame seeds.
- In a saute pan over medium heat, add the olive oil. Add the garlic, ginger, orange juice and 1/4 cup water and bring to a simmer. Add the preserved lemon or lemon zest, honey, orange blossom water, turmeric, cayenne pepper, cinnamon and coriander. Cook until the sauce is reduced a bit, another 3 to 4 minutes. Season with salt and pepper. Put the sauce in a bowl, add the hot fried wings and toss until evenly coated. Serve hot, sprinkled with the parsley and cilantro, with the olives and almonds alongside.

- Put the chicken wings, buttermilk and 1/2 tsp salt in a bowl and toss together to coat. Cover and leave in the fridge overnight.
- Heat oven to 200C/180C fan/ gas 6. Put all the ingredients for the spice mix in another large mixing bowl with a pinch of salt and mix well. Remove the wings from the fridge and, one at a time, roll them in the spice mix. Once fully coated, tip onto a baking tray lined with baking parchment, and roast for 35 mins. Meanwhile, mix the ingredients for the glaze together.
- Once the wings have browned, remove them from the oven and generously brush with the glaze. Reduce oven to 180C/160C fan/ gas 4, put the wings back in and cook for a further 15 mins or until the glaze has gone sticky and is starting to caramelise.
