1 litre Sprite Zero, (or your favourite lemon-lime pop)
1 cup strawberries, (sliced 1/4 inch thick)
1 cup raspberries
1/2 cup blueberries
1/2 cup red currants, (optional)
30-35 whole fresh mint leaves, (plus more for garnish (optional))
ice cubes
4 whole limes, (two sliced 1/4 inch slices, the other two quartered)

Steps:

  • Begin by placing the mint leaves and quartered lime wedges into a tall pitcher.
  • Using the handle of a wooden spoon, crush the mint leaves and lime wedges together. Essentially, you're bruising the leaves to extract the minty flavour.
  • Add the fruit to the pitcher and about a cup of ice.
  • Pour in the Sprite gently stir to combine.
  • Pour into glasses. Garnish each glass with mint leaves, more fruit, and add more ice if desired.

4 raspberries
3 blackberries
3 lime wedges (or 1/4 lime, cut into 3 pieces)
3 fresh mint leaves plus 2 mint sprigs, for garnish
2 small strawberries, hulled and sliced in half
2 teaspoons granulated sugar
2 ounces silver rum
2 ounces seltzer water

Steps:

  • In a pint or large glass, combine the raspberries, blackberries, lime wedges, mint leaves, strawberries and sugar and muddle with a muddler or wooden spoon. Add the rum and mix with a spoon. Fill the glass with ice, top off with the seltzer and stir. Garnish with the mint sprigs and serve with a straw.

Found an interesting looking one on the Food and Wine Magazine's website! 1 teaspoon raw sugar
1 ounce fresh lime juice
1/2 ounce simple syrup
ice
4 ounces club soda or 4 ounces sparkling water

2 lime wedges
5 leaves of fresh mint
2 -3 teaspoons sugar
crushed ice
club soda

Steps:

  • In a 8-12 oz. glass, with the back of a spoon, mash the berries, lime wedges, mint and sugar until well blended. You can remove the mint, or alternatively, blend the berries, lime juice(from wedges), mint and sugar in a blender.
