4 pounds pork spareribs
1 cup brown sugar
¼ cup ketchup
¼ cup soy sauce
¼ cup Worcestershire sauce
¼ cup rum
½ cup chile sauce
2 cloves garlic, crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Cut spareribs into serving size portions, wrap in double thickness of foil, and bake for 1 1/2 hours. Unwrap, and drain drippings. (I usually freeze the drippings to use later in soups.) Place ribs in a large roasting pan.

1/2 cup Peppery Dry Rub, recipe follows
Vegetable oil cooking spray
3 tablespoons chili powder
2 tablespoons freshly ground black pepper
2 tablespoons paprika
2 teaspoons crushed red pepper
1 teaspoon salt
1 clove garlic, minced

Steps:

  • Trim the spareribs, if necessary, and rub both sides of the ribs with the dry rub, working it into the meat. Put the ribs in a shallow glass or ceramic dish, cover, and set aside at room temperature for no longer than 30 minutes, or refrigerate for up to 24 hours. Alternatively, enclose the ribs in a sealable plastic bag and refrigerate.
  • Prepare a charcoal or gas grill, arranging the coals for indirect cooking. Lightly spray the grill rack with vegetable cooking spray. The coals should be hot.

1 tablespoon thin soy sauce
1 tablespoon black soy sauce
1 tablespoon hoisin sauce
1 tablespoon ground bean sauce
1 tablespoon Shao Hsing rice cooking wine
1 tablespoon oyster flavored sauce
1 teaspoon sesame oil
1/4 teaspoon ground white pepper
3 tablespoons honey

Steps:

  • Cut the spare ribs into 2 equal pieces. Remove any visible fat pockets. Lightly score the spareribs in the meat side and place them in a large, shallow bowl. Sprinkle sugar on both sides of ribs, using more on the meaty side. Set aside to marinate for 15 minutes. Pour off any excess liquid. In a small bowl combine the thin and black soy sauces, hoisin sauce, bean sauce, rice wine, oyster sauce, sesame oil and pepper and stir to combine. Pour over the spareribs, making sure that the spareribs are well-coated. Loosely cover the ribs with plastic wrap and marinate overnight in the refrigerator. Place the marinated spareribs meat-side up on the rack, leaving about 1-inch of space between the 2 pieces. Carefully place the pan in the oven and roast 30 minutes. Monitor the water level in the broiler pan to make sure it never falls below 1/4-inch. Carefully remove the roasting pan of ribs from the oven. Preheat the broiler. Place the roasting pan of ribs 4 inches from the heat and broil 5 to 10 minutes or until the spareribs have a sugar crust similar to the crust on a baked ham. Carefully remove the spareribs from the oven and set on a platter to cool 15 minutes. Cut the spareribs into individual ribs and serve immediately or at room temperature. 1 cup sugar

2 1/2 tablespoons sugar
3 tablespoons paprika
2 tablespoons ground cumin
1 1/2 tablespoons black pepper
1 tablespoon chili powder
1 tablespoon salt
2 full racks pork spareribs (each 3 lb), brisket flap and chine bone removed
For basting sauce
1 3/4 cups distilled white vinegar
2 tablespoons sugar
1 tablespoon Tabasco
1 tablespoon salt
1 1/2 teaspoons black pepper

Steps:

  • Stir together sugar, spices, and salt and rub all over ribs to coat well, knocking off excess.
  • Put chips in foil and crimp tightly closed to form a packet. Poke holes all over packet.
  • Stir together all sauce ingredients until sugar is dissolved.
  • Open vents two-thirds in lid and bottom of grill. Light half a chimney of charcoal, then put on one side of bottom rack, mounding and banking against side. Charcoal will be ready for cooking when it turns grayish white (10 to 15 minutes). Temperature should be about 350°F inside covered grill. Add additional charcoal if necessary. (Temperature will gradually drop during cooking; the goal is to maintain a low, continuous heat, about 250°F.) Put wood-chip packet on coals, then arrange grill rack so that one hinged side is over the coals.
  • Oil rack lightly. Arrange ribs on rack so that they do not extend over coals, then cover.
  • Cook ribs, covered until tender, about 4 hours. Every 20 minutes, baste ribs with sauce, turn over and switch positions, and add about 8 pieces of charcoal to the mound.
