Time 30m

Yield 6 servings

Number Of Ingredients 14

3 cups cranberries (one 12-ounce bag)
3/4 cup granulated sugar
1/4 cup orange juice
Finely grated rind of one orange
Pinch of salt
1 to 2 tablespoons orange liqueur, like Grand Marnier (optional)
1/2 teaspoon minced, dried orange peel (optional)
1 cup unbleached flour
1/4 cup light brown sugar
1/4 cup dark brown sugar
1/4 teaspoon salt
6 tablespoons cold, unsalted butter
3/4 cup walnuts, roughly chopped
Vanilla ice cream, frozen yogurt or creme fraiche

Steps:

  • Preheat oven to 375 degrees.
  • Discard any stems from the cranberries. Wash them in a colander and shake dry.
  • In a mixing bowl, stir together the cranberries, sugar, orange juice, rind, pinch of salt, and liqueur, if desired, and dried peel. Spread out the cranberries evenly in a greased 6-to-8-cup shallow baking dish.
  • With a wire whisk, mix the flour, light and dark brown sugars, and 1/4 teaspoon salt. Cut the butter into small bits. With your fingertips, work it together with the flour until it is like rough meal. Mix in the nuts, and spread the topping evenly over the cranberries. (If making several hours in advance, cover and refrigerate. If assembling the day before, refrigerate the cranberry mixture and topping separately, and combine right before cooking.)
  • Bake on the middle level of the oven for 40 minutes, until the juices have started to bubble up and the crust has browned. Let cool for 20 minutes before serving warm with creme fraiche, ice cream or frozen yogurt.

Tips:

  • Use high-quality chocolate: The quality of the chocolate you use will greatly affect the taste of your candy bites. Look for chocolate with a high cocoa content (at least 70%) for the best flavor.
  • Toast the walnuts: Toasting the walnuts will enhance their flavor and make them more crunchy. Spread the walnuts in a single layer on a baking sheet and toast them in a preheated oven at 350°F for 5-7 minutes, or until fragrant.
  • Chop the walnuts and dried cherries finely: This will help them distribute evenly throughout the candy bites. You can use a food processor or a sharp knife to chop them.
  • Use a silicone mold: A silicone mold will make it easy to remove the candy bites once they are set. If you don't have a silicone mold, you can use a mini muffin tin lined with parchment paper.
  • Chill the candy bites before serving: This will help them firm up and make them easier to eat. You can chill them in the refrigerator for at least 30 minutes, or overnight.

Conclusion:

These walnut and cranberry candy bites are a delicious and easy-to-make treat that is perfect for any occasion. They are made with just a few simple ingredients and can be customized to your liking. With their sweet and tart flavor, these candy bites are sure to be a hit with everyone who tries them.
