1 large onion, finely diced
3 ribs celery, finely diced
Kosher salt
3 cloves garlic, smashed and finely diced
1 pound spicy sausage, casing removed, broken up into bite-size chunks
3 Granny Smith apples, peeled, cored, and cut into 1-inch dice
1 cup apple cider
1/2 bunch sage, leaves finely chopped
3/4 cup coarsely chopped walnuts
10 cups stale rustic bread, crusts discarded, cut into 1-inch cubes; or fresh bread slices toasted until crispy but no color, cut into 1-inch cubes
2 to 3 cups chicken stock

Steps:

  • Coat a large saute pan, over medium heat, with olive oil and add the onions and celery. Season with salt and cook until the veggies start to become soft and are very aromatic. Add the garlic and cook for another 1 to 2 minutes. Add the sausage and cook until the sausage browns. Stir in the apples and apple cider and cook until the apples start to soften, about 3 to 4 minutes. Sprinkle in the sage leaves and the walnuts and turn off the heat.
  • Preheat the oven to 350 degrees F.
  • Add the diced bread and toss together. Pour in the chicken stock and knead with your hands until the bread is very moist, actually wet. Taste to check for seasoning and season with salt, if needed, (it does). Transfer to a large deep ovenproof dish (roughly 9 by 11 inches) and bake until it is hot all the way through and crusty on top.
  • Remove from the oven and serve.

4 ounces sweet Italian sausage, casings removed
4 ounces hot Italian sausage, casings removed
2 celery stalks, chopped
1 medium onion, chopped
1 Granny Smith apple, diced
Kosher salt and freshly ground black pepper
One 14-ounce package cubed stuffing mix
1 tablespoon finely chopped fresh sage
2 teaspoons finely chopped fresh thyme
1 1/2 cups turkey or chicken stock
1/2 cup apple butter, store-bought or homemade, recipe follows
1 large egg, lightly beaten
3 1/2 pounds mixed apples, peeled, cored and cut into 3/4-inch pieces
2 cups apple cider, preferably unfiltered
3/4 cup sugar
3 tablespoons fresh lemon juice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon ground ginger
1/8 teaspoon ground cloves

Steps:

  • Preheat the oven to 400 degrees F. Lightly butter a bundt pan.
  • In a dry saute pan set over medium heat, toast the walnuts until light golden brown, about 5 minutes; cool and chop.
  • Melt the butter in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Reduce the heat to medium, add the celery, onion, apple and 1/2 teaspoon salt and cook, stirring occasionally, until softened, 8 to 10 minutes; remove from the heat.
  • In a large mixing bowl, add the stuffing mix, sage, thyme and walnuts. Mix together the stock, apple butter and egg in a separate bowl, then add it to the mixing bowl along with the sausage-vegetable mixture. Add 1/2 teaspoon each salt and pepper and stir gently to combine thoroughly.
  • Transfer the stuffing mixture to the bundt pan and bake until hot and golden brown on top, 30 to 40 minutes. If the top starts to get too brown, cover with foil. Let rest for 10 minutes in the bundt pan, then unmold onto a serving platter.
  • Combine the apples, apple cider, sugar, lemon juice, cinnamon, allspice, ginger, cloves and salt in a Dutch oven or large, heavy pot and bring to a simmer over medium-high heat. Reduce the heat to medium and simmer, partially covered, until the apples are very tender, about 25 minutes.
  • Meanwhile, preheat the oven to 300 degrees F.
  • Puree the apple mixture using an immersion blender or in batches in a regular blender (be careful when blending hot liquids).
  • Transfer the Dutch oven to the oven. Bake, uncovered, stirring every 20 minutes so that the bottom does not burn, until the mixture is very thick and a rich brown caramel color, about 3 hours. Let cool completely.

1 cup small cubes crustless country bread
1/2 cup coarsely chopped walnuts
1 large egg, beaten to blend
1 tablespoon grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 4-pound chickens, rinsed, patted dry
12 thin pancetta slices
3 large fresh fennel bulbs, trimmed, each cut into 6 wedges

Steps:

  • Preheat oven to 400°F. Melt 1/4 cup butter in large skillet over medium heat. Add giblets (if using), onion, carrot, sage, and garlic. Sauté until carrot is tender, about 10 minutes. Add wine; simmer until evaporated, scraping up browned bits. Remove from heat. Mix in bread, walnuts, egg, Parmesan, 1/2 teaspoon salt, and 1/2 teaspoon pepper.
  • Spoon stuffing into cavities of chickens; skewer cavities closed. Rub each chicken with 2 tablespoons butter; sprinkle with salt and pepper. Arrange in roasting pan. Lay 6 pancetta slices atop each to cover. Surround with fennel.

1/3 cup walnuts, toasted and finely chopped
1 tablespoon plain breadcrumbs

4 slices bacon

Steps:

  • Place oven rack 6 inches from the top of the oven and preheat oven to 350.
  • Mash together gorgonzola, walnuts, breadcrumbs and sage.
  • Season with pepper.
  • Mold into 4 logs.
  • Cut a deep pocket into the thickest side of each breast.

  • I mixed the bread and spices and the liquid and then added celery, onion, raisins, apple and cranberries. I also used water instead of cider. It made enough to feed 11, but didn't leave leftovers. Next time I would make two helpings, one for the oven and one for in the turkey.

1 1/4 cups apple cider, preferably unfiltered
1/4 cup blackstrap molasses
1 turkey (14 to 16 pounds), room temperature, patted dry

1 large loaf rye bread, cut into 1-inch pieces and lightly toasted (12 cups)
1 cup black walnuts, toasted and coarsely chopped
1/2 cup lightly packed coarsely chopped fresh flat-leaf parsley

2 large eggs, lightly beaten
1/2 cup dry white wine
2 3/4 cups low-sodium chicken broth
2 tablespoons all-purpose flour
2 tablespoons unsalted butter

Steps:

  • Turkey: Preheat oven to 450 degrees, with rack in lower third. Boil 1/2 cup cider in a small saucepan until reduced by half, about 5 minutes. Remove from heat; stir in molasses until combined. Season body and neck cavities of turkey generously with salt and pepper. Rub butter evenly over skin; season with salt and pepper. Let stand 30 minutes.
  • Stuffing: Meanwhile, melt butter in a large skillet over medium-high. Add onion, celery, apple, and garlic; season with 1 teaspoon salt and 1/4 teaspoon pepper. Cook, stirring occasionally, until onion is translucent, about 3 minutes. Add wine; bring to a boil and cook until reduced by half, about 2 minutes. Transfer mixture to a large bowl; toss with bread, walnuts, parsley, and 1 cup broth until combined. Fold in eggs.
  • Lightly pack half of stuffing into body and neck cavities of turkey. Toss remaining stuffing with remaining 1 cup broth; transfer to a lightly buttered 2-quart baking dish and cover with parchment-lined foil. Tie turkey legs together with twine. Transfer to a roasting pan fitted with a rack. Pour broth and remaining 3/4 cup cider into pan.
  • Roast turkey 30 minutes. Reduce heat to 350 degrees. Brush turkey with some of cider-molasses glaze. Continue roasting, brushing with more glaze every 20 minutes, until a thermometer inserted in thickest part of thigh (avoiding bone) and into stuffing registers 165 degrees, 1 hour, 30 minutes to 2 hours, depending on size of bird. (Add more broth as needed to prevent bottom of pan from scorching.) Transfer turkey to a carving board. Let stand 30 minutes.
  • Meanwhile, bake extra stuffing in baking dish 15 minutes. Uncover and continue baking until top is crisp and golden brown in spots, about 15 minutes more.
  • Gravy: Remove rack from roasting pan; skim excess fat from pan drippings with a large spoon. Heat pan across two burners over medium-high. Add wine and bring to a boil, scraping browned bits from bottom of pan with a wooden spoon. Add 2 1/2 cups broth; return to a boil. Whisk together remaining 1/4 cup broth and flour in a small bowl. Slowly pour flour mixture into pan, whisking constantly, until gravy thickens slightly, about 2 minutes. Remove from heat; stir in butter until combined. Strain gravy through a fine-mesh sieve; transfer to a gravy boat.
  • Remove twine from turkey and transfer to a platter. Garnish with apples, pears, and fennel. Carve turkey and serve, with stuffing and gravy alongside.

12 slices sourdough bread, cut into 1/2" cubes
1 large onion, chopped
2 garlic cloves, chopped
4 teaspoon extra virgin olive oil
1 celery stalk, chopped
1 pound shiitake mushrooms, chopped
1 1/2 cup currants
1 teaspoon fresh sage chopped
1 teaspoon fresh rosemary, stemmed and chopped
1 teaspoon fresh oregano, stemmed and chopped
1 cup walnuts, toasted and chopped
2 ounces Egg Starts
6 ounces organic egg whites
Salt and freshly ground pepper, to taste
1 1/2 cup vegetable stock

Steps:

  • Preheat the oven to 350°F. Cut the bread into pieces and set aside. Toast the walnuts on a sheetpan, set aside. In a large skillet, sauté the onion and garlic in oil over medium heat until the onions are golden. Add the celery, mushrooms, currants and the herbs and cook an additional 5 minutes. Remove and place in a bowl, fold in the remaining ingredients and season to taste. Place in an oiled 8-inch square ovenproof dish, cover and bake for 30 minutes. Remove cover and bake an additional 15 minutes, uncovered, to crisp the top.

1 teaspoon dried dill weed
3 tablespoons vegetable oil, divided
¼ cup chopped watercress leaves

2 teaspoons soy sauce
4 whole trout

Steps:

  • At home: Mix cracker crumbs, walnuts, and dill in a resealable plastic bag. Store oil, watercress, water onion, parsley, and soy sauce in individual bags and containers and combine them in a larger, self-sealing plastic bag labeled with recipe instructions.
  • On the trail: Place onion in a skillet with 1 tablespoon of the oil. Cook and stir over low to medium heat for 2 to 3 minutes. Add parsley and water. Cover and steam for a minute or so; stir in the watercress.

I've prepared this several times and really like the fact that this(and a lot of the recipes from the article) can be prepared in advance.

2 cups walnuts, shelled
1/2 cup butter
2 cups onions, chopped
6 garlic cloves, finely diced
2 cups fresh breadcrumbs (4 slices bread)
1/2 cup fresh parsley, chopped
4 eggs, lightly beaten
1 1/2 teaspoons fresh mint leaves, chopped or 3/4 teaspoon dried mint
3/4 teaspoon salt
1/2 teaspoon oregano
6 lbs leg of lamb, deboned and butterflied
salt and pepper
1 garlic clove, slivered (to taste)
canola oil

Steps:

  • For Stuffing:.
  • Preheat oven to 350 degrees.
  • In medium saucepan cook walnuts in boiling water to cover for 3 minutes;drain.
  • Arrange on a jelly-roll pan and toast in oven until golden, about 5 to 10 minutes, shaking pan occasionally.
  • When cool enough to handle, chop coarsely; set aside.
  • In a skillet over medium-high heat, melt butter.
  • Cook onions and garlic, stirring occasionally, about 5 minutes.
  • In a large bowl combine walnuts,onion mixture and remaining stuffing ingredients.
  • *Can be made ahead to this point. Cover and refrigerate until well chilled, at least 4 to 6 but up to 24 hours.
  • Makes 3 cups stuffing.
  • Open the leg of lamb with cut side up, butterfly fashion.
  • Sprinkle with salt and pepper.
  • Spoon chilled stuffing onto meat;fold one side over to enclose stuffing.
  • Run string lengthwise along lamb and tie to secure.
  • Then tie string around meat every 2 inches to form a long meat bundle.
  • With point of a sharp knife, cut 1 inch deep slashes along top of lamb and insert garlic slivers.
  • *Can be made ahead to this point. Cover and refrigerate up to 24 hours.
  • Preheat oven to 450 degrees.
  • Rub surface of meat with oil and place it on rack in an open roasting pan.
  • Insert meat thermometer into center of meat.
  • Reduce oven temperature to 325 degrees and roast for 2 to 2 1/2 hours, or until internal temperature reaches desired doneness; 140 for rare,160 for medium.
  • Let stand 10 minutes, slice and serve.
