Categories     breakfast, easy, condiments

Time 45m

Yield 16 ounces, enough for 4 to 6 servings

Number Of Ingredients 4

4 tart apples, peeled, cored and sliced into eighths
1 tablespoon sugar (optional)
1/4 lemon
1 vanilla bean

Steps:

  • Place the apples in a saucepan with the sugar (if using). With a very sharp knife, remove the rind from the lemon (avoiding the bitter pith). Then mince the rind and add it to the saucepan. Squeeze the juice of the lemon into the saucepan, add the vanilla bean, cover, and cook over medium heat for half an hour. If the mixture becomes too dry, add a tablespoon of water, but the idea is to steam the apples in their own juices. Serve with healthy hot cakes.

Tips:

  • Use a variety of apples: This will give your apple pockets a more complex flavor. Some good options include Granny Smith, Honeycrisp, and Pink Lady.
  • Don't overfill the apple pockets: They should be just full enough so that they can be sealed properly. If they are too full, they will burst open during baking.

  • Serve the apple pockets warm: They are best enjoyed fresh out of the oven, when the apples are still soft and the filling is still gooey.
