Time 1h40m

Yield 6 servings

Number Of Ingredients 10

1 1/2 cups hulled quartered strawberries
1/2 cup sugar, plus 3 tablespoons
5 ounces Maria crackers* (about 1 pack or 32 crackers), or graham crackers
1/4 cup, packed minced piloncillo** (about 2 ounces), or packed brown sugar
8 tablespoons (1 stick) chilled unsalted butter, cubed
1 (8-ounce) bars cream cheese, room temperature
1/2 cup sour cream
1 envelope whipping powdered topping (about 1/4 cup powder)
6 individual tart tins with removable bottoms or 1 (9-inch) tin
Nonstick cooking spray

Steps:

  • Mix the strawberries and 3 tablespoons of the sugar in a small bowl. Let the strawberries macerate at room temperature for 1 hour.
  • Preheat the oven to 350 degrees F. Arrange 6 individual tartlet pans with removable bottoms on a baking sheet. Spray the tartlet pans with nonstick cooking spray. Blend the Maria crackers and the piloncillo in a processor until coarse crumbs form. Add the butter and process until the crumbs come together. Press the crumbs into the prepared tartlet pans. Bake until the tartlet shells are golden brown, about 10 minutes. Cool completely.
  • Using an electric mixer, whip the cream cheese and the sour cream in a small bowl, until fluffy. Add the remaining 1/2 cup of sugar and whip until well combined. Add the whipping powdered topping and whip until very fluffy. Drain all but 2 tablespoons of the macerating liquid from the strawberries. Fold the strawberries and the reserved 2 tablespoons of liquid into the cream mixture. Spoon the filling over the tartlets, dividing equally. Tarts can be prepared 1 day ahead, covered and refrigerated

Categories     Milk/Cream     Egg     Appetizer     Bake     Cocktail Party     Vegetarian     Brie     Saffron     Phyllo/Puff Pastry Dough     Simmer     Gourmet     Sugar Conscious     Kidney Friendly     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Serves about 48 hors d'oeuvre

Number Of Ingredients 6

six 17- by-12 inch phyllo sheets, thawed if frozen, stacked between 2 sheets wax paper and covered with a towel
3 tablespoons unsalted butter, melted
1 cup heavy cream
1/2 teaspoon saffron threads
3 large egg yolks
10 ounces Brie, rind discarded and cheese cut into 1/3-inch cubes

Steps:

  • Preheat oven to 350°F.
  • On a work surface arrange 1 phyllo sheet with a long side facing you and brush lightly with some butter. Top with a second phyllo sheet and brush lightly with butter. Top with a third phyllo sheet and cut stacked phyllo lengthwise into 4 strips and crosswise into 6 strips to make twenty-four 3-inch squares. With scissors cut off corners of squares to form octagons and cover with plastic wrap.
  • Line each mini-muffin cup with 1 phyllo octagon, letting edges curl naturally, and bake in middle of oven until golden brown, about 10 minutes. Carefully transfer shells in cups to racks to cool completely. Make 24 more octagons with remaining 3 phyllo sheets and butter in same manner, Shells may be made 1 week ahead and kept in cups, wrapped in plastic wrap, at room temperature, or 1 month ahead and frozen.
  • In a small saucepan simmer cream with saffron until reduced to about 3/4 cup and cool slightly. Whisk in yolks and season with salt and pepper. Divide Brie among shells and spoon 2 teaspoons saffron cream into each shell. Bake tartlets in 2 batches in middle of oven about 8 minutes, or until filling is puffed. Cool tartlets in cups on racks 5 minutes and carefully lift out onto racks to cool completely. Serve tartlets warm or at room temperature.

Tips:

  • Use fresh, high-quality ingredients. This will make a big difference in the flavor of your tartlets.
  • Don't overcook the lobster. Lobster is a delicate seafood, so it's important to cook it just until it's opaque and tender. Overcooked lobster will be tough and chewy.
  • Use a sharp knife to cut the brie. This will help to prevent the cheese from crumbling.
  • Be careful not to overfill the tart shells. If you overfill them, the filling will spill over the sides and make a mess.
  • Serve the tartlets warm. This is the best way to enjoy the flavors of the lobster, brie, and puff pastry.

Conclusion:

Warm Lobster and Brie Tartlets are a delicious and elegant appetizer that is perfect for any occasion. They are easy to make and can be tailored to your own taste preferences. Whether you serve them at a party or a casual gathering, these tartlets are sure to be a hit.
