Categories     dinner, main course

Time 1h10m

Yield Four servings

Number Of Ingredients 20

1 teaspoon olive oil
1 medium onion, peeled and diced
1 cup Great Northern beans, soaked overnight and drained
7 cups water
1 medium-size ancho chili
1 teaspoon salt, plus more to taste
Freshly ground pepper to taste
2 teaspoons chopped cilantro
1 large clove garlic, peeled and minced
2 tablespoons fresh lime juice
3 tablespoons olive oil
1/8 teaspoon salt
Freshly ground pepper to taste
1/2 cup sesame seeds
1/4 cup cumin seeds
1/2 teaspoon salt, plus more to taste
Olive oil spray
1 pound large shrimp, peeled and deveined
2 egg whites, lightly beaten
1 lime, halved

Steps:

  • To make the beans, heat the olive oil in a large saucepan over medium heat. Add the onion and cook until soft, about 5 minutes. Add the beans and water and bring to a boil. Reduce heat so the liquid simmers and cook until the beans are tender, about 1 hour. Drain and season with the salt and pepper to taste.
  • Meanwhile, place the chili in a saucepan and cover with water. Simmer until the chili is soft, about 5 minutes. Stem and seed the chili. Cut into small dice and set aside.
  • To make the dressing, whisk together the garlic, lime juice, olive oil, salt and pepper. Set aside.
  • To make the shrimp, heat a small skillet over medium heat. Add sesame seeds and shake pan until seeds are toasted, about 20 seconds. Place in a bowl. Place cumin seeds in the skillet and toast for about 15 seconds. Place in a spice grinder and pulse until cracked but not ground. Stir together sesame and cumin seeds and 1/2 teaspoon salt.
  • Preheat broiler. Spray a baking sheet with the olive oil. One at a time, dip the shrimp into the egg whites and then coat with the sesame seed mixture. Place on the prepared baking sheet. Broil the shrimp until cooked through and nicely browned, about 3 minutes per side. Season with additional salt and squeeze the lime juice over the shrimp.
  • Place the warm beans in a large bowl. Stir in the chili and toss with the vinaigrette. Season with additional salt if needed. Divide the salad among 4 plates and top with shrimp. Garnish with the cilantro and serve.

Yield Serves 2

Number Of Ingredients 9

3 tablespoons olive oil, divided
1 medium shallot, thinly sliced
1 (14.5-ounce) can diced tomatoes
1/2 teaspoon (or more) kosher salt, divided
1/2 teaspoon freshly ground black pepper, divided
1 (15-ounce) can white beans, rinsed, drained
1/4 cup Roasted Garlic Herb Sauce or high-quality pesto, plus more for serving
8 ounces shrimp, peeled, deveined (about 16 medium)
Thick slices of crusty toasted bread (for serving)

Steps:

  • Heat 2 Tbsp. oil in a large skillet over medium; cook shallot until just softened and golden, about 2 minutes. Add tomatoes with their juices, 1/4 tsp. salt, 1/4 tsp. pepper, and 1/4 cup water. Increase heat to high, bring to a boil, and cook until sauce thickens slightly, about 5 minutes. Reduce heat to low, add beans and 1/4 cup Roasted Garlic Herb Sauce, and cook, stirring, until warmed through, 1-2 minutes. Taste and adjust salt if needed, then divide bean mixture between 2 large, shallow bowls.
  • Wipe out skillet. Heat remaining 1 Tbsp. oil in skillet over medium-high. Add shrimp and remaining 1/4 tsp. salt and 1/4 tsp. pepper. Cook, stirring often, until shrimp is cooked through and starting to take on a little color on both sides, about 3 minutes. Divide shrimp between bowls with beans; drizzle with additional sauce. Serve with toast alongside.

Tips:

  • Prepare Ingredients Efficiently: Before cooking, rinse and clean the shrimp, chop the vegetables, and measure out the sauce ingredients. This will save time during the cooking process.
  • Cooking Shrimp: Cook the shrimp until they turn pink and opaque, indicating that they are cooked through. Overcooking can make them tough and rubbery.
  • Seasoning: Use a combination of salt, pepper, garlic powder, and paprika to season the shrimp and vegetables. Feel free to experiment with other spices and herbs to create different flavor profiles.
  • Stir-Frying Technique: Make sure to stir-fry the shrimp and vegetables over high heat to get a nice sear and preserve their texture.
  • Sauce Preparation: Bring the sauce ingredients to a simmer in a separate pan and let it thicken slightly before adding it to the shrimp and vegetables.
  • Serving Suggestions: Serve the warm shrimp and beans over rice, noodles, or salad for a complete meal. You can also garnish it with chopped cilantro, green onions, or sesame seeds for extra flavor and color.
