Provided by Martha Stewart

Categories     Food & Cooking     Salad Recipes

Number Of Ingredients 12

3 cups water
1 cup wild rice
Coarse salt
2 fresh poblano peppers
3 tablespoons extra-virgin olive oil
3 garlic cloves, minced
1 1/2 cups corn kernels (from about 3 ears)
1 can (15 ounces) black beans, drained and rinsed
Freshly ground pepper
2 scallions, thinly sliced (1/2 cup)
2 tablespoons chopped fresh cilantro
1/4 cup fresh lime juice (from 2 to 3 limes)

Steps:

  • Bring water to a boil in a medium saucepan. Add rice and 2 teaspoons salt. Cover, reduce heat, and simmer until rice is al dente and some grains have split, 45 to 50 minutes. Drain.
  • Roast poblanos directly over a gas-stove burner or under a broiler, turning often with tongs, until charred on all sides. Place in a bowl, cover with plastic wrap, and let stand for 15 minutes. Rub poblanos with a paper towel to remove skins. Cut a slit down the side of each poblano, and remove seeds. Cut into 1/2-inch dice.
  • Heat oil in a large skillet over medium heat. Add garlic, and cook, stirring often, about 2 minutes. Add poblanos, and cook for 1 minute. Stir in corn, and cook for 3 minutes. Add wild rice and black beans, stirring to coat, and cook for 2 minutes. Season with salt and pepper.
  • Let cool slightly, then transfer to a bowl. Cover, and refrigerate until cold, about 1 hour. Stir in scallions, cilantro, and lime juice.

WARM WILD RICE SALAD WITH DRIED FRUIT AND NUTS

Warm Wild Rice Salad With Dried Fruit and Nuts image

This is a recipe I found on "Miso Vegan". Scrumptious! I skip soaking the rice over night. I usually just soak it for an hour or two if I have the time. The lemon zest, balsamic and garlic in this salad is such a nice undertone to the sweet dried fruit! Especially the currants!

  • From recipe creator - If making ahead, reheat rice salad on the stove top or bake at 350 degrees F. in a covered casserole dish for 20 minutes. (untried by me as of yet).
  • *Cook's note: For best results, soak dried fruit in hot water or warm juice for 15 minutes or more to rehydrate slightly and give the fruit a juicier, chewy texture.

Time 1h10m

Yield 4 servings

Number Of Ingredients 11

2 acorn squash, halved, seeds removed and discarded
1 tablespoon vegetable oil
Kosher salt and freshly ground black pepper
1/2 cup wild rice
1/2 cup long-grain rice
1 tablespoon salted butter
1 tablespoon olive oil
2/3 cup diced red onion
1/4 cup golden raisins
2 tablespoons chopped chervil or parsley, plus 4 sprigs for garnish
1 teaspoon chopped tarragon

Steps:

  • Preheat oven to 375 degrees. Using a knife, cut a very thin disk from the bottom of each squash half so that they sit level. Using a pastry brush, coat the squash inside and out with vegetable oil. Place on a baking sheet, sprinkle the tops with salt and pepper and bake until tender when pierced with a fork, 45 to 55 minutes.
  • Meanwhile, place the wild rice in a small saucepan and add 3 cups water and 1/2 teaspoon of salt. Bring to a boil, lower to a simmer and cook, covered, until the grains just begin to pop open, 30 to 40 minutes. Drain and set aside. In another saucepan, bring 1 cup water and 1/2teaspoon of salt to a boil. Add long-grain rice, stir once, cover and simmer until tender, 15 to 20 minutes. Set aside.
  • In a medium skillet set over medium heat, melt the butter. Add olive oil, onion and raisins and cook, stirring, until onion is soft, about 3 minutes. Add all the rice and cook, stirring, until heated through. Stir in the chopped chervil and tarragon, season with salt and pepper and remove from heat. Spoon mixture into the baked squash shells, mounding it slightly. Garnish with chervil sprigs and serve.

Tips:

  • Choose the Right Wild Rice: Use a high-quality blend of wild rice, such as a mixture of long-grain and short-grain varieties, for a more flavorful and textured salad.
  • Cook the Wild Rice Properly: Follow the package instructions for cooking the wild rice, as different brands may have specific recommendations. Generally, wild rice takes longer to cook than white rice, so plan accordingly.
  • Don't Overcook the Vegetables: When sautéing the vegetables for the salad, cook them until they are tender-crisp but still retain their vibrant color and texture.
  • Use Fresh Herbs: Fresh herbs, such as parsley, cilantro, or basil, add a burst of flavor and aroma to the salad. Chop them finely before adding them to the salad.
  • Balance the Dressing: The dressing should complement the flavors of the salad without overpowering them. Adjust the proportions of olive oil, vinegar, and Dijon mustard to achieve a well-balanced taste.
  • Let the Salad Marinate: After assembling the salad, let it marinate for at least 30 minutes before serving. This allows the flavors to meld and develop, resulting in a more flavorful salad.

Conclusion:

This warm wild rice salad is a delightful and versatile dish that can be enjoyed as a main course or as a side dish. With its combination of hearty grains, crisp vegetables, tangy dressing, and nutty Parmesan cheese, this salad is a true crowd-pleaser. Feel free to customize the recipe by using different vegetables, herbs, and cheeses to create your own unique flavor combinations.
