Time 1h35m

Yield 10 to 12 servings

Number Of Ingredients 7

Two 8-ounce cans whole water chestnuts, drained and rinsed
2 tablespoons low-sodium soy sauce
14 slices bacon, cut crosswise into thirds
1/3 cup ketchup
1/3 cup firmly-packed dark brown sugar1 tablespoon Worcestershire sauce
Nonstick cooking spray
Freshly ground black pepper

Steps:

  • Combine the water chestnuts and soy sauce in a resealable plastic bag and let marinate at room temperature, tossing and massaging the bag occasionally, for 30 minutes.
  • Preheat the oven to 400 degrees F. Wrap each water chestnut in a piece of bacon and secure with a toothpick. Set a cooling rack into a rimmed baking sheet and arrange the bacon-wrapped water chestnuts on top. Bake until the bacon renders its fat and is crisp, about 30 minutes.
  • Meanwhile, stir together the ketchup, brown sugar, Worcestershire sauce and 1/3 cup water in a bowl to make a sauce.
  • Remove the baking sheet from the oven and carefully lift the cooling rack off the baking sheet. Drain away any fat in the baking sheet and wipe dry with paper towels. Line the baking sheet with foil and lightly spray the foil with nonstick cooking spray. Carefully transfer the bacon-wrapped water chestnuts to the bowl with the sauce, swirling to fully coat, then spread out on the baking sheet.
  • Return the baking sheet to the oven and bake, tossing every few minutes, until the sauce is reduced to a sticky glaze, about 15 minutes. Immediately transfer the bacon-wrapped water chestnuts to a warm serving platter. Sprinkle with pepper and serve while hot.

BACON WRAPPED WATER CHESTNUTS

Bacon Wrapped Water Chestnuts image

My mother used to make these and keep them warm on a warming tray (the kind you plug into the wall) for appetizers. These are really easy and my dh loved these simple appetizers -- plus they can be considered emergency appetizers too as it's easy to have the three ingredients (bacon, a can of water chestnuts and brown sugar) needed to make these on hand all the time.

Time 30m

Yield 24 appetizers

Number Of Ingredients 3

24 water chestnuts (1 small can, drained)
2 tablespoons brown sugar
8 pieces bacon, cut into thirds (24 pieces of bacon)

Steps:

  • Combine water chestnuts with sugar.
  • Wrap bacon piece around water chestnuts attaching with a toothpick; repeat for all remaining bacon and water chestnuts. ***You can do this hours ahead and refrigerated.
  • In a 425-degree F oven, roast wrapped water chestnuts for 15 minutes or until bacon is golden brown.
  • Serve hot or keep warm on a hot plate (see description).

Tips:

  • Choose fresh water chestnuts. Look for water chestnuts that are firm and have a smooth, light brown skin. Avoid any that are soft, wrinkled, or have dark spots.
  • Peel the water chestnuts before cooking. To peel a water chestnut, use a sharp knife to make a small incision in the skin. Then, use your fingers to peel the skin off of the chestnut.
  • Slice the water chestnuts thinly. This will help them to cook evenly and absorb the flavors of the other ingredients.
  • Wrap the water chestnuts in bacon tightly. This will help to keep them moist and prevent them from falling apart.
  • Bake the water chestnuts at a high temperature. This will help to caramelize the bacon and create a crispy exterior.
  • Serve the water chestnuts hot. They are best enjoyed when they are fresh out of the oven.
