1 box (18.25 ounce) white cake mix
1 box (3 ounce) lime Jello (not sugar free)
3 egg whites
1/3 cup vegetable oil
1 1/4 cup water
8 ounce white chocolate, melted
1/2 cup butter, softened
4 cups powdered sugar
1/2 teaspoon Koolaid powdered mix (watermelon flavor)
3-4 Tablespoons milk
3/4 cup mini chocolate chips

Steps:

  • For the cake, add cake mix, jello, egg whites, oil and water in a mixing bowl. Beat 2 minutes until blended. Fill cupcake liners 2/3 full and bake in a 350 degree oven for 15-18 minutes. Do not overbake. Allow to cool completely.
  • When cooled, spread melted white chocolate over top of each cupcake. While that sets, begin your frosting.

1 1/2 cups watermelon, (1 cup watermelon puree)
15.25 oz white cake mix
3 large eggs
1/3 cup vegetable oil
.15 oz watermelon Kool-Aid, (optional)
2 1/2 cups buttercream frosting
Red and green food coloring or gel paste
1/4 cup mini chocolate chips

Steps:

  • Preheat oven to 350˚F. Add 24 cupcake liners to two 12 cup muffin pans. Set aside.
  • Puree the watermelon cubes and measure out one cup of watermelon puree.
  • Put the cake mix, watermelon puree, eggs, vegetable oil, and watermelon Kool-Aid (if using) in a large mixing bowl. Mix for 30 seconds on low and then beat for 2 minutes at medium speed.
  • Divide batter between the 24 muffin cups.
  • Bake at 350˚F for 19-23 minutes. Cool completely on a rack.
  • Divide the buttercream into three bowls. Tint 1/3 of the buttercream pink, 1/3 green, and leave 1/3 white.

1 cup lemon-lime soda
3 large egg whites, room temperature
1/4 cup canola oil
1 package (3 ounces) watermelon gelatin
2 drops watermelon oil, optional
2 cups butter, softened
6 cups confectioners' sugar
1 package (3 ounces) watermelon gelatin
5 to 6 tablespoons lemon-lime soda
15 drops red food coloring
3 tablespoons miniature semisweet chocolate chips

Steps:

  • Preheat oven to 350°. Line 24 muffin cups with paper liners. In a large bowl, combine cake mix, soda, egg whites, canola oil, gelatin and if desired, watermelon oil; beat on low speed 30 seconds. 1 stick unsalted butter, room temperature (1/2 cup)
3/4 cup granulated sugar
2 large egg whites
½ cup sour cream
1/4 cup milk (I used skim)
1 tsp vanilla extract
1 ¼ cup all purpose flour
1 tsp baking powder
1/4 tsp salt
leaf green food coloring by wilton (or similar light green food coloring)
3 sticks unsalted butter, room temperature (1 1/2 cups)
3-4 cups powdered sugar
1/2 tsp powdered watermelon kool aid mix
small amount of red gel food coloring (to give the buttercream a pinkish color)
mini chocolate chips

Steps:

  • Preheat the oven to 350º F. Line a muffin pan with muffin liners.
  • In a mixing bowl combine the butter and sugar, beat using an electric mixer, 1-2 minutes until fluffy. Add in the egg whites, sour cream, milk, and vanilla extract. Beat lightly with the electric mixer. In a separate mixing bowl combine the flour, baking powder, and salt. Gradually add the flour mixture to the wet ingredients a few spoonfuls at a time. Mix until just incorporated. Add in a small amount of Wilton's "leaf green" gel food coloring until you get your desired green color. Fill the muffin liners 1/2-3/4 full.

1 - 16 ounce container (about 2 cups) sour cream

FOR THE FROSTING
6 tablespoons unsalted butter, softened
1 dram (1 teaspoon) watermelon flavoring oil
1 tablespoon lemon juice
3 tablespoons milk
5 to 6 cups confectioners' sugar

Steps:
