2 sprigs fresh mint, plus more for garnish
Ice
1 1/2 ounces Kentucky bourbon
3/4 ounces Lemongrass-Ginger Simple Syrup, recipe follows
Cold club soda
Lime
6 stalks lemongrass
2 cups sugar
One 1-inch slice fresh ginger

Steps:

  • Add the mint and ice to a cocktail shaker and muddle. Add the bourbon and the Lemongrass-Ginger Simple Syrup and shake vigorously to combine. Serve on the rocks in a Collins glass. Top with club soda, a squeeze of lime juice and garnish with a sprig of mint.
  • Trim the lemongrass stalks so you have the bases only. Bash with the back of a knife (or a meat mallet) so the oils and aroma release more easily.
  • Combine the lemongrass, sugar, 2 cups cold water and ginger together in a medium saucepan and set over medium heat. Simmer until the sugar dissolves. Reduce the heat and allow to sit so the lemongrass and ginger steeps in the syrup. Once the syrup is fragrant, 30 to 40 minutes, strain and use.

1 tablespoon plus 1 1/2 teaspoons fresh lemon juice
2 1/2 teaspoons finely grated (preferably on a Microplane zester) lemongrass
1 1/2 teaspoons finely grated (preferably on a Microplane zester) fresh ginger
Coarse salt
Ice cubes
Garnish: trimmed lemongrass stalks

Steps:

  • Puree watermelon in a blender until smooth. Strain mixture through a fine sieve into a pitcher. Stir in lemon juice, lemongrass, ginger, and 1/8 teaspoon salt. Refrigerate until chilled, about 20 minutes.

1/4 cup fresh lime juice
6 cups roughly chopped seedless watermelon (about 2 pounds)
1/2 cup sugar
1 lime, zested
1 (2-inch) piece ginger divided, 1-inch cut into coins, 1-inch peeled and grated
Fleur de sel, for garnish

Steps:

  • In a blender, blend the lime juice and watermelon together, creating watermelon water. Strain the liquid through a fine mesh strainer to remove any seeds. Place 1/2 cup of the watermelon water into a saucepan and add the sugar, lime zest and ginger coins. Bring the mixture to a simmer to dissolve the sugar and infuse the liquid with the ginger and lime flavor. Set aside to cool. Add the grated ginger to the remaining watermelon water. Once the syrup is cool, remove the ginger coins and mix into the watermelon water. Pour the mixture into a 9 by 13-inch glass baking dish. Place the dish into the freezer to chill. Every 30 minutes, scrape the mixture with a fork to break up the ice crystals and to keep it light and fluffy. Continue scraping every 30 minutes for at least 2 hours.
