WATERMELON MINT SMOOTHIE
I'm always tossing watermelon with fresh mint, so I decided to see how the two would blend in a smoothie. The result is like a cross between a sweet mint tea and a watermelon agua fresca.

Steps:
- Place all of the ingredients except the watermelon balls in the blender. Blend until frothy, about one minute. Pour into a glass, and garnish with watermelon balls. Serve right away.
GRILLED WATERMELON BASIL MINT SMOOTHIE

- Preheat a grill to high heat (400 degrees F). To grill the watermelon, first sprinkle with the sugar and salt. Grill quickly, cooking each side for 2 minutes and flipping with a wide spatula. Once the watermelon is cooked, remove from the grill and add to a blender, along with the yogurt, apple juice, ice, honey and vanilla. Puree until smooth, 1 to 2 minutes. Finally, add the mint and basil leaves, pulse 5 to 6 times and serve. Garnish with watermelon wedges and mint.

- Combine diced watermelon, frozen strawberries, chilled guava juice, and chopped mint in blender. Puree until smooth. Pour smoothie into 2 glasses. Top each smoothie with strawberry and mint sprig and serve.
WATERMELON YOGURT MINT SMOOTHIE
There's nothing more refreshing on a hot summer's day than watermelon, the base for this yummy summer smoothie from the Meals for You website. The recipe specifies non-fat lemon yoghurt, but I always use creamy Greek yoghurt, and because I love lemony flavours, I add the juice of half a lemon. The honey counter-balances this superbly.
