SPICY WATERMELON SALAD WITH PINEAPPLE AND LIME
Refreshing, sweet and spicy, this salad is the edible equivalent of a crisp beer on a hot summer's day. It pushes the watermelon-feta-mint combination to new heights with a Mexican-inspired flavor profile of lime, jalapeño and cilantro. It's also easy to prepare, requiring little more than a knife, a bowl and a whisk. Enjoy it as soon as it's assembled, as the salty dressing draws the juice out of the fruit fairly quickly and the salad can lose its fresh crunch. A sprinkle of Tajín, a chile-lime Mexican spice blend, is optional, but adds a touch of smoke.

MEXICAN-STYLE FRUIT SALAD
Katie loved visiting the various Mexican-American fruit stands during her time in Los Angeles. The vendors would sprinkle fruit cups with fresh lime juice and the popular chile-lime salt Tajin. Inspired by those stops, she created this larger format fruit salad that has a hint of spice. The result is a refreshing and irresistible snack.

Tips:
- Choose ripe fruits: The riper the fruits, the sweeter and more flavorful your salad will be. Look for fruits that are brightly colored and free of blemishes.
- Cut the fruits into uniform pieces: This will help them cook evenly and make your salad more visually appealing.
- Don't overcrowd the pan: If you overcrowd the pan, the fruits will steam instead of caramelizing. Cook the fruits in batches if necessary.
- Use a non-stick skillet: This will help prevent the fruits from sticking to the pan and burning.
- Cook the fruits over medium heat: This will help them caramelize slowly and evenly.
- Stir the fruits frequently: This will help prevent them from burning and ensure that they cook evenly.
- Serve the fruits immediately: Caramelized fruits are best served warm, so enjoy them right away.
Conclusion:
Caramelized fruits are a delicious and versatile treat that can be enjoyed on their own or used as a topping for desserts, yogurt, or pancakes. They are also a great way to use up ripe fruits that would otherwise go to waste. With just a few simple ingredients and a little bit of time, you can create a delicious and impressive dish that everyone will love.
