1 thick slice meaty beef shank with bone
⅓ cup coarsely chopped onion
⅓ cup coarsely chopped carrot
⅓ cup coarsely chopped celery
2 quarts water
1 bay leaf
3 cloves garlic, peeled
¼ teaspoon whole black peppercorns
10 ounces boneless beef short ribs
½ beaten egg
1 tablespoon chopped fresh parsley
2 cloves garlic, minced
2 tablespoons heavy whipping cream
½ cup soft bread crumbs
¼ cup shredded Parmigiano-Reggiano cheese
⅓ teaspoon salt, or to taste
⅛ teaspoon freshly ground black pepper
1 quart chicken broth
1 teaspoon tomato paste
salt and freshly ground black pepper to taste
1 bunch kale, stems removed and leaves coarsely chopped

And, for the pasta you can use either acine de pepe -or- orzo. Recipe makes enough to serve 2-3 people, but is easily doubled or even tripled.

1 slice white bread, crust removed
1/4 cup milk
garlic clove, minced
6 ounces ground turkey
1 tablespoon olive oil
1 egg yolk
2 teaspoons fresh parsley, minced

4 cups chicken broth
2 ounces orzo pasta
1/2 bunch fresh Baby Spinach
1 egg
1 tablespoon water
2 tablespoons grated parmigiano
2 tablespoons chopped fresh parsley
