Overnight Sausage Breakfast Casserole with sausage, peppers, cheese and Italian seasoning is one my favorite make ahead breakfasts!

Steps:
- Remove casing from sausage and cook over medium high heat until no pink remains. Drain any fat.
- Layer ½ of the cubes in a greased 9×13 pan. Top with ½ of each the sausage, green onions, peppers, and cheese. Repeat layers ending with cheese.
- Combine eggs, milk, & seasonings Pour egg mixture over bread ensuring all of the bread has been covered. Refrigerate overnight (or at least 3 hours).
- Remove from fridge and place in the oven while preheating the oven to 350°F. Bake covered with foil 65-75 minutes or until a knife inserted in the center comes out clean. (If you are baking 2 pans increase cooking time will need to increase).

- Take the sausage out of the casing, and fry it up, breaking it into small little pieces as you go. Cook thoroughly, then drain and pat the extra grease off with paper towels. Using maple flavored sausage gives it a sweet flavor that just can't be beat!
- In another bowl, combine the mustard, salt, eggs and milk, mixing thoroughly.
- Toast the slices of bread and slice into cubes.
- Do NOT layer the bread instead of cubing it. The texture and end result is much, much different and I will be posting layered casseroles in the weeks to come. This one is unique and should be baked like the instructions.
- Combine the egg mixture with the bread cubes and cheese. Pour into a very well greased pan and cover.
- Refrigerate overnight.
- The next morning, take it out, and preheat the oven to 350 degrees. Cover it and bake at 350 for an hour. Take the tinfoil off and add the shredded cheese on top. Turn the oven down to 325 and bake for another 30-40 minutes, until it's cooked in the middle. ( 165 degrees is the safe temp)

- Cut the bread into 1-inch cubes and spread in the bottom of a greased 9- by 13- by 2- inch casserole dish.

This is recipe originally from Jimmy Dean. It is similar to the Rise and Shine casserole listed on this site but is seasoned and includes the bread too. Perfect for a weekend breakfast or brunch or for a holiday or birthday morning. It is somewhat labor intensive in that you have to remember to refridgerate it but not too long and take it out before baking for an hour but not longer than 2 and you have to let it sit when you really just want to eat it right away. But it takes a lot of the prep out of chopping etc. So check it out.Thus preparation time includes refrigeration time, prep and letting it sit after baking. Serve this to family and friends. Enjoy. - Preheat oven to 350°. Using about 1 tablespoon butter or margarine, grease the bottom and sides of a 3-quart casserole dish. Layer bottom only of casserole dish with white bread; bread should touch but not overlap. Pour package of Jimmy Dean Skillets on top of bread, evenly distribute from side to side. - In the same pan, sauté the mushrooms, onion, garlic, and green chiles.
