WEIGHT WATCHER FRIENDLY BANANA BREAD (LOW FAT)

Weight Watcher Friendly Banana Bread (Low Fat) image

I grew up eating a very yummy, but very fattening version of banana bread. Since starting Weight Watchers, I wanted to recreate the same type of bread without all the fat as well as incorporating whole grains. I actually prefer to make these as muffins so I have the perfect portion size every time. Each muffin or serving is 2 WW points.

Tips:

  • Choosing the Right Bananas: Select ripe, spotty bananas for intense flavor and sweetness. Avoid bananas that are too green or have bruises.
  • Prepare the Loaf Pan: Grease and flour a 9x5 inch loaf pan before pouring the batter. This prevents sticking and ensures the bread comes out cleanly.
  • Mix Dry Ingredients Thoroughly: Before combining with the wet ingredients, whisk together the flour, baking soda, and salt in a separate bowl. This ensures even distribution and prevents lumps.
  • Cream Butter and Sweetener: Use an electric hand mixer or stand mixer to cream the butter and sweetener together until light and fluffy. This incorporates air, resulting in a tender and moist bread.
  • Add Eggs One at a Time: Gradually add the eggs one at a time, beating well after each addition. This prevents the mixture from curdling and ensures a smooth batter.
  • Fold in Mashed Bananas: Gently fold in the mashed bananas using a spatula. Overmixing can result in a dense bread.
  • Pour Batter and Bake: Pour the batter into the prepared loaf pan and bake at 350°F for 1 hour or until a toothpick inserted into the center comes out clean.
  • Cool Before Serving: Allow the bread to cool completely in the pan before transferring to a wire rack. This prevents crumbling and ensures a clean slice.
