Steps:
- Preheat oven to 375 degrees.
- Cut edges off onion, and remove outer layer. Cut onion into 1/2 inch wide slices, and separate into rings. Next, fill a small bowl (just large enough for onion rings to fit in) with Egg Beaters.
- Using a blender or food processor, grind Fiber One cereal to a breadcrumb-like consistency. Pour crumbs onto a small dish.
- One by one, coat each ring in egg and then crumbs (give each ring a shake after the egg bath). Place on an oven-safe baking dish sprayed with nonstick spray. Cook for 20-25 minutes, flipping rings over about halfway through.
- **Although you'll only actually use a quarter cup, it may be easier to dunk the rings if you dole out a bit more Egg Beaters while preparing.

Tips:
- Use a mandoline or sharp knife to slice the onions evenly. This will help them cook evenly.
- Soak the onion rings in buttermilk or milk for at least 30 minutes before coating them in bread crumbs. This will help the bread crumbs adhere to the onions and prevent them from falling off during cooking.
- Use a light touch when coating the onion rings in bread crumbs. Too much breading will make them heavy and greasy.
- Do not overcrowd the onion rings in the baking dish. This will prevent them from cooking evenly.
- Flip the onion rings halfway through baking to ensure that they cook evenly on both sides.
- Serve the onion rings hot with your favorite dipping sauce.
Conclusion:
These Weight Watcher Onion Rings are a delicious and healthy alternative to traditional onion rings. They are baked instead of fried, so they are lower in fat and calories. They are also made with whole wheat bread crumbs, which makes them a good source of fiber. Whether you are looking for a healthier appetizer or a side dish, these Weight Watcher Onion Rings are a great option.
