1 cup sugar
1/3 cup organic coconut oil
1 teaspoon vanilla extract

Time 22m

Yield 3 dozen cookies, 36 serving(s)

Number Of Ingredients 11

1 1/2 cups flour
3/4 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup dark brown sugar, packed
1/4 cup unsalted butter, softened
1 teaspoon vanilla extract
1/4 cup nonfat sour cream
1 large egg
3/4 cup quick-cooking rolled oats (not instant)
1/2 cup mini chocolate chip

Steps:

  • Preheat the oven to 350 degrees.
  • Spray 2 large baking sheets with nonstick spray.
  • Combine the flour, baking powder, baking soda and salt in a bowl and set aside.
  • Beat the brown sugar, butter and vanilla in a large bowl until blended.
  • Beat in the sour cream and egg.
  • Add the flour mixture and beat until blended, about 1 minute.
  • Stir in the oats and chocolate chips.
  • Spoon the dough onto the baking sheets about 1 inch apart making a total of 36 cookies.
  • Dip the bottom of a glass in flour and press the floured glass against each mound to make a 2 1/2 inch round cookie.
  • Bake until light browned, about 12 minutes.
  • Transfer to racks to cool.

Tips:

  • Use ripe bananas. The riper the bananas, the sweeter the cookies will be. If your bananas are not ripe enough, you can microwave them for a few seconds to soften them up.
  • Don't overmix the batter. Overmixing will make the cookies tough. Mix just until the ingredients are combined.
  • Use a cookie scoop to drop the batter onto the baking sheet. This will help the cookies to be uniform in size and shape.
  • Bake the cookies until they are just set. Over baking will make the cookies dry and crumbly.
  • Let the cookies cool completely before eating them. This will allow the flavors to develop and the cookies to firm up.

Conclusion:

These vegan chocolate chip cookies are a delicious and healthy treat that can be enjoyed by people of all ages. They are perfect for a quick snack or dessert, and they are also a great way to use up ripe bananas. With their rich chocolate flavor and chewy texture, these cookies are sure to be a hit with everyone who tries them.
