  • While the fritters are still warm sprinkle them lightly with powdered sugar and serve at once.

BREAD MACHINE WEST AFRICAN BANANA FRITTERS

Bread Machine West African Banana Fritters image

This is based on a recipe from Madge Rosenberg's cookbook, The Best Bread Machine Cookbook Ever - Ethnic Breads. She says, "These fritters, similar to what we know as beignets, make inexpensive party food rich in natural fruit flavors. Children will enjoy munching these crispies with milk, but the big kids will eat their way through an endless supply with coffee or beer." My kind of fritters!

Tips:

  • Choose ripe bananas: Overripe bananas are ideal for making fritters as they are sweeter and have a softer texture.
  • Use all-purpose flour: This is the most common type of flour used in banana fritters. It provides a light and crispy batter.
  • Add sugar and spices: Sugar adds sweetness to the fritters, while spices like cinnamon, nutmeg, and ginger add warmth and flavor.
  • Don't overmix the batter: Overmixing the batter will make the fritters tough. Mix just until the ingredients are combined.
  • Fry the fritters in hot oil: The oil should be hot enough to sizzle when the fritters are dropped in. This will help create a crispy outer layer.
  • Drain the fritters on paper towels: This will help remove excess oil from the fritters.
