1 (9 inch) prepared pie crust
1 cup diced ham
2 ½ cups shredded mild Cheddar cheese
1 ¼ cups milk
4 eggs, whisked
1 red bell pepper, diced, or more to taste
1 medium onion, diced
1 clove garlic, minced
1 teaspoon ground black pepper
½ teaspoon white sugar
½ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place pie crust in a 9-inch glass pie plate.
  • Cook ham in a skillet over medium heat until it no longer looks moist, about 3 minutes. Remove from heat and cool to room temperature.
  • Combine Cheddar cheese, milk, eggs, bell pepper, onion, garlic, black pepper, sugar, and salt in a bowl. Stir in ham. Pour into the prepared pie crust.

1 bunch scallion (sliced)
1 small green pepper (chopped)
2 ounces Canadian bacon (chopped)
1/2 cup shredded reduced-fat cheddar cheese
1 cup fat-free evaporated milk
3/4 cup liquid egg substitute
2 teaspoons Dijon mustard
1/4 teaspoon ground nutmeg
1 tablespoon grated parmesan cheese

Steps:

  • Preheat the oven to 350°F.
  • Coat a pie pan with cooking spray.
  • Heat a medium nonstick skillet coated with cooking spray over medium heat.
  • Cook the scallions, bell pepper, and bacon for 3 minutes, or until softened.
  • Spoon into the prepared pie pan.
