1.5 kg chicken bones
water enough to cover the bones
3.8 liters chicken stock top up with water is not enough
250 g rice
1 tablespoon salt
1 century egg mashed
1 salted egg whole
chopped scallion
ginger cut into fine julienne
light soy sauce
sesame oil
ground white pepper

Steps:

  • Wash the chicken bone to remove any debris and dirt.
  • Place the chicken bone in a stock pot.
  • Add cold water sufficient to submerge all the bones.
  • Heat the water over high heat until it starts to boil. Once it is boiled, reduce the heat.
  • Simmering on your stove top for one hour. Stir occasionally.
  • Skim of the scum floating on the surface from time to time. This step can help to obtain a clean stock.
  • After one hour, remove the bone. Let the chicken stock pass through a wire mesh strainer.
  • Let the stock sits for ten minutes. Then pour it into another pot through a strainer again, but discard the sediments at the bottom.
  • Clean the rice by rinsing it twice with plenty of water.
  • Soak the rice with water for one to three hours.
  • Bring the chicken broth to a boil. Add the rice into the liquid. Keep stirring to prevent the rice from sticking to the bottom of the pot.

1/4 cup dried fruit (cranberries, cherries, raisins and/or chopped apricots)

Steps:

Several of these recipes from all of the books are all time favorites of mine so I will post them here. Rice porridge, known as "Skansk grot" in Sweden, made pioneer settlers feel at home in America. This is a wonderful comfort food for a sickie or just for a rainy day.

1 large apple
1 teaspoon butter
1 cup white rice
1 cup water
3 inches cinnamon sticks, or
1 teaspoon ground cinnamon
4 cups milk
3 tablespoons brown sugar
1/3 cup raisins
1 teaspoon vanilla
cream
honey

Steps:

  • Peel and chop apple.
  • Rub butter over bottom and sides of a 3 quart saucepan.
  • Place rice, water, and cinnamon into the saucepan and bring to a boil.
  • Cover and simmer for 10-15 minute or until water has been absorbed.
  • Add milk to saucepan. Heat and stir until simmering but not boiling.
  • Add brown sugar, chopped apple, and raisins and stir gently.
  • Cover pan and allow porridge to simmer for about 45 minute As it cooks, it will thicken. Stir once or twice while it cooks.
  • Turn off heat and remove pan from burner. Remove cinnamon stick and stir in vanilla.
  • Serve warm with cream or honey if desired. Also good saved in fridge and warmed up.

1 cup jasmine rice, uncooked
1/2 stalk lemongrass
1/2 lb ground meat (you can use ground pork, beef or chicken)
1 pinch salt and black pepper

Steps:

  • Add the water or broth of your choice, rice and lemongrass into a pot and bring to a boil. Cook for about 7 minutes on high, stirring constantly to keep the rice from sticking to the bottom of the pot.

2 whole chickens, salted overnight
1 lb rib eye steak
1 lb sweet shrimp
fish sauce, for seasoning

  • Bring 4 gallons (16 quarts) water and the rice to a rolling boil, and then add the whole chickens. Add the rib eye steak and sweet shrimp. Cover the pot with a lid, but vent it slightly with two chopsticks. Braise for 1 hour, and then season with fish sauce, grated ginger and salt. Allow the chickens to rest in the porridge until cooled, and then pull them out before serving. Slice the steak and add the slices to the porridge.
