WHIPPED CAULIFLOWER, LOW-CARB

Whipped Cauliflower, Low-Carb image

Finally mastered this dish after about a dozen tries! Great low-carb side dish to replace mashed potatoes. Like I said above, I have made this at least a dozen times and feel I have perfected it! Fool around with it some, but I have found these ingredients, cutting as much stem off, and squeezing all the water out really make this delicious! You can add a splash of milk to make it even creamier.

DO AHEAD: Whipped goat cheese can be made 1 day ahead. Cover; chill.

Tips:

  • Choose the right cauliflower: Look for a head of cauliflower that is compact and heavy, with no brown spots or blemishes.
  • Trim the cauliflower: Remove the leaves and any tough outer leaves from the cauliflower. Cut the cauliflower into florets, about 2 inches in size.
  • Steam the cauliflower: Steaming is the best way to cook cauliflower for this recipe, as it helps to preserve its nutrients and flavor. Steam the cauliflower florets for 10-12 minutes, or until they are tender but still slightly firm.
  • Cool the cauliflower: Once the cauliflower is steamed, drain it and let it cool slightly. This will help to prevent the cauliflower from becoming watery when you blend it.
  • Use a high-powered blender: A high-powered blender is essential for getting a smooth and creamy whipped cauliflower. If you don't have a high-powered blender, you can use a food processor, but the results may not be as smooth.
  • Add flavorings: Once the cauliflower is whipped, you can add any flavorings you like. Some popular options include garlic, onion, herbs, spices, and cheese.
  • Serve immediately: Whipped cauliflower is best served immediately, as it can start to lose its creaminess over time.

Conclusion:

Whipped cauliflower is a delicious and versatile dish that can be enjoyed in many different ways. It is a great way to get your daily dose of vegetables, and it is also a good source of fiber, vitamins, and minerals. With its creamy texture and mild flavor, whipped cauliflower can be used as a side dish, a dip, or a spread. It is also a great way to sneak vegetables into your kids' meals.
