1 tablespoon red wine vinegar
1 teaspoon minced shallots
2 pinches nutmeg
3 anchovies
Grated zest and juice of 1 lemon
1 clove garlic
Kosher salt and freshly cracked black pepper
2/3 cup extra-virgin olive oil
1/2 cup fresh parsley, finely minced

Steps:

  • Render the bacon in a small pan over medium-low heat, stirring regularly to prevent burning. Drain on paper towels, reserving the fat.

1 teaspoon chili powder
1(19-ounce) can white beans, such as cannellini, rinsed and drained
1 cup grated sharp white cheddar cheese
1/4 to 1/3 cup sour cream or yogurt, or to taste
2 tablespoons fresh lemon juice
Salt and cayenne, to taste
Assorted raw vegetables, such as carrot sticks, broccoli florets,
Bell pepper strips, etc. and/or tortilla chips as accompaniments

Steps:

  • In a skillet cook the bacon over moderate heat, until crisp. Transfer bacon to a plate lined with paper towel and pour off all but 2 tablespoons fat. 1/2 strip bacon, diced
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
2 shallots, chopped
2 15 -ounce cans cannellini or other white beans, drained and rinsed
6 leaves fresh sage, chopped
4 cloves garlic, chopped
3 cups low-sodium chicken broth
1/2 cup heavy cream
1/4 teaspoon cayenne pepper
Kosher salt
3 slices crusty bread, toasted
2 ounces goat cheese, at room temperature
Freshly ground black pepper

Steps:

  • Fry the bacon in a medium saucepan over medium heat until halfway done, 3 minutes. Add the olive oil, butter and shallots and saute until soft, 6 minutes. Add the beans, sage, garlic and broth, bring to a simmer and cook 15 more minutes.
  • Transfer the mixture to a blender or food processor in three batches and puree until smooth. (Be careful-hot liquids are prone to explode when whipped!) Return the pureed soup to the pan and add the cream, cayenne, and salt to taste. Keep warm.

2 tablespoons minced fresh thyme or 2 teaspoons dried thyme
24 slices French bread baguette (1/2 inch thick)
Sliced ripe olives and additional fresh thyme, optional

1 (16 ounce) package dried navy beans
9 cups water
1 pound bacon
2 onions, chopped
2 stalks celery, chopped
4 teaspoons chicken bouillon
1 bay leaf
⅓ teaspoon salt
¼ teaspoon ground black pepper
⅛ teaspoon ground cloves
1 (16 ounce) can diced tomatoes
4 cups water

Steps:

  • Boil the beans in 9 cups of the water and then let sit for one hour. Drain and set aside.
  • Cook the bacon to your desired texture (it can be soft or crisp, whatever you prefer) and drain except for 1/4 cup grease. Coarsely chop the bacon.
  • Add the onions and celery to the reserved grease and bacon and saute until soft, do not drain. Add the chicken base or cubes, 4 cups water, beans, bay leaf, salt, pepper, and cloves, and simmer for 2 hours.
