1 pound dried navy beans
6 cups turkey or chicken broth
1 cup chopped onion
4 garlic cloves, minced
1 teaspoon white pepper
1/2 teaspoon crushed red pepper flakes
1/4 to 1/2 teaspoon curry powder
1/4 teaspoon ground cumin
2 pounds turkey or chicken breast, cooked and cubed
1 can (15-1/4 ounces) white sweet corn
1 cup heavy whipping cream
Chopped green and sweet red peppers, optional

Steps:

  • Place beans in a large saucepan or Dutch oven; cover with water. Bring to a boil and boil for 2 minutes. Remove from the heat and soak for 1-4 hours or until beans are softened. Drain and rinse beans; return to the pan. Add broth, onion, garlic and seasonings. , Cover and simmer for 1-1/2 hours or until beans are tender. Add turkey and corn; simmer for 15 minutes. 2 pounds boneless skinless chicken breasts, cut into 1/2-inch cubes
2 medium onions, chopped
2 garlic cloves, minced
4 cans (15-1/2 ounces each) great northern beans, rinsed and drained
2 cans (14-1/2 ounces each) chicken broth
4 cans (4 ounces each) chopped green chiles
2 jars (8 ounces each) roasted sweet red peppers, drained and finely chopped
2 teaspoons salt
2 teaspoons ground cumin
2 teaspoons dried oregano
1 teaspoon pepper
1/2 teaspoon hot pepper sauce
2 cups sour cream
1 cup heavy whipping cream
Optional: Chopped roasted sweet red peppers, ripe avocado and green onions

Steps:

  • In a 6-qt. stockpot, heat oil over medium-high heat. Add chicken and onions in batches; cook and stir 4-5 minutes or until chicken is no longer pink and onions are tender.
