1 bunch scallions, green and white parts separated
3 tablespoons extra-virgin olive oil, plus more for drizzling
Fine sea salt and freshly ground black pepper
4 (6- to 8-ounce) boneless, skinless cod fillets
1 1/2 teaspoons soy sauce
1 teaspoon fish sauce
2/3 cup plain Greek yogurt
2/3 cup finely chopped Persian or English (hothouse) cucumber
1 tablespoon minced fresh dill or mint
2 teaspoons fresh lemon juice, plus more for serving
1 garlic clove, finely grated or mashed to a paste
Red-pepper flakes, preferably Urfa or Espelette
Flaky sea salt, for serving (optional)

Steps:

  • Heat oven to 450 degrees. Mince enough of the scallion greens to equal 2 tablespoons and reserve. Halve remaining scallion whites and greens lengthwise to make ribbons. Place scallion ribbons in a bowl and toss with 1 tablespoon oil and a pinch of salt; set aside.
  • Season cod with salt and pepper, and place on a rimmed baking sheet. Drizzle cod with a little oil, soy sauce and fish sauce. Transfer to the oven and roast, 2 minutes. 4 tablespoons olive oil
4 limes, halved
1 tablespoon seasoning, blend (spicy or your preference)
1 head butterleaf lettuce, leaves separated
1 head radicchio, leaves separated
5 roma tomatoes, diced for garnish
1 medium red onion, sliced thinly for garnish
12 kalamata olives, pitted and halved
1 tablespoon fresh oregano, chopped fine
2 tablespoons parsley, chopped
2 heads scallions, sliced thinly on the bias for garnish on yogurt
sea salt
ground black pepper
1 tablespoon fresh lemon juice
1/2 cup extra virgin olive oil
1 teaspoon minced garlic, about 1 large clove
1 teaspoon kosher salt
2 cups yogurt
1 cup peeled seeded and grated cucumber, about 1 medium cucumber

Steps:

  • To make dressing, add the cucumber yogurt dressing ingredients - lemon juice, olive oil, garlic and salt to the yogurt. Add grated cucumber and mix well. Chill for at least one hour.
  • Preheat grill to 400 degrees.
  • Season the halibut with half of the olive oil, half of the lime juice, seasoning blend, salt and pepper.Let sit for 10 minutes.
  • Place on the grill until cooked through, but not dry, about 6-8 minutes.
  • In a mixing bowl, mix the tomatoes, onion, olives, oregano, parsley, the remaining olive oil, remaining lime juice, salt and pepper and blend well.

1 1/2 pounds cucumbers (2 large), peeled, halved lengthwise, and seeded
Kosher or sea salt
1/4 cup minced red onion
1/2 cup whole-milk yogurt, drained of excess liquid
1/2 cup sour cream
2 to 3 tablespoons minced fresh herbs (dill, mint, cilantro, parsley, and/or chives)
2 teaspoons minced jalapeño chile (optional)
1 tablespoon fresh lemon juice, or more to taste
Freshly ground black pepper

Steps:

  • 1. Cut the cucumbers into 1/8-inch dice with a chef's knife, or pulse them in a food processor until chopped into 1/8-inch pieces (do not over process). Place the cucumbers in a large stainless steel strainer set in the sink or over a bowl, sprinkle them with 1 teaspoon salt, and let them drain for 30 minutes.
