I am posting this recipe, by request. It is a very nice non-tomato sauce vegetarian lasagna. Not gluten-free!

2 small zucchini (about 8 oz. each)
1/2 bunch broccoli
1 bunch spinach leaves (firmly packed)
2 tablespoons butter (or margarine)
1/2 teaspoon dried oregano leaves
1/2 teaspoon salt (divided)
15 ounces ricotta cheese (can be part skim)
2 eggs
12 lasagna noodles (about)
3 tablespoons butter (or margarine)
1/4 cup flour
2 1/2 cups milk
1/4 cup parmesan cheese
8 ounces mozzarella cheese (slices)

Steps:

  • Dice zucchini. Coarsely chop broccoli and spinach.
  • In a nonstick 12 -inch skillet over medium heat, melt butter (or margarine), cook zucchini, broccoli, oregano, and 1/4 teaspoon of salt, stirring frequently, until vegetables are tender-crisp, about 5 minutes. Add Spinach and toss until wilted. remove skillet from heat.
  • In medium bowl, with fork, mix ricotta and eggs; set aside.
  • Prepare lasagna noodles as label directs. Drain.
  • Meanwhile, preheat oven to 350 degrees F.
  • In 2-quart saucepan over medium heat, melt 3 tablespoons margarine (or butter). Stir in flour and 1/4 teaspoon salt until smooth. Gradually stir in milk; cook, stirring constantly until sauce comes to a boil and thickens. Remove saucepan from heat; stir in Parmesan cheese.
  • In13-by-9-inch glass baking dish, layer half of the prepared lasagna noodles, half of the ricotta mixture, half of the vegetable mixture, and half of the mozzarella. Top with half of the sauce, then with the remaining noodles, ricotta, and vegetable mixture. Spoon remaining sauce over vegetable layer; arrange remaining mozzarella on top.
  • Bake lasagna 40 to 45 minutes until hot and bubbly. Let lasagna stand 10 minutes for easier serving.

2 zucchini, sliced
2 green bell peppers, cut in 1-inch pieces
1 (8 ounce) package sliced fresh mushrooms
1 onion, cut into 8 wedges
1 tablespoon chopped fresh basil
1 clove garlic, pressed
½ teaspoon salt
¼ teaspoon ground black pepper
12 lasagna noodles
2 (28 ounce) jars pasta sauce
1 (16 ounce) package shredded mozzarella cheese
1 cup freshly shredded Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a large baking sheet with cooking spray.

1 can (28 oz) Muir Glen™ organic tomato puree

3 tablespoons chopped fresh or 1 tablespoon dried oregano leaves
1 teaspoon sugar
1/2 teaspoon salt

Steps:

3 zucchini, cut in half lengthwise then thinly sliced
2 red bell peppers, chopped
16 ounces cremini mushrooms, sliced (baby bellas)

2 -3 shallots, minced (about 1/2 cup)
4 garlic cloves, minced
1 teaspoon italian seasoning or 1 teaspoon dried basil
2 tablespoons all-purpose white flour
1 1/2 cups 1% low-fat milk
1/2 cup light cream
1 cup gouda cheese, shredded
1/2 cup asiago cheese, shredded (3/4 oz)
2 cups frozen chopped spinach, thawed and squeezed dry
13 3/4 ounces water-packed artichoke hearts, drained and chopped

3 tablespoons olive oil
1 garlic clove, minced
1 teaspoon salt
1/2 teaspoon pepper
1 carton (15 ounces) reduced-fat ricotta cheese
1/4 cup grated Parmesan cheese
1/4 cup egg substitute
1 jar (26 ounces) chunky meatless spaghetti sauce
12 no-cook lasagna noodles
2 cups shredded part-skim mozzarella cheese
3 tablespoons minced fresh basil

  • Coat two 15x10x1-in. baking pans with cooking spray. Place eggplant and mushrooms on one prepared pan. Place the zucchini and red pepper on the second pan. 1/4 cup extra-virgin olive oil, plus more for baking dish
1 teaspoon dried oregano
3 garlic cloves, thinly sliced
Coarse salt and ground pepper
1 medium butternut squash, peeled, seeded, and sliced inch thick
3 bunches (about 2 1/2 pounds total) spinach, trimmed and washed
1 container (15 ounces) whole-milk ricotta
1/2 cup grated Parmesan
1 egg
1/4 teaspoon ground or freshly grated nutmeg
9 to 12 no-boil lasagna noodles (from a 9-ounce package)
1 pound fresh mozzarella, cut into pieces

Steps:

  • Preheat oven to 400 degrees, with racks in upper and lower thirds. On a rimmed baking sheet, toss tomatoes with 2 tablespoons oil, oregano, and two-thirds the garlic; season with salt and pepper. Brush another rimmed baking sheet with 1 tablespoon oil. Arrange squash in one layer; season with salt and pepper. 2 celery ribs, chopped

2 teaspoons minced fresh oregano or 1/2 teaspoon dried oregano
