WHITE SAUCE OR BECHAMEL SAUCE

White Sauce or Bechamel Sauce image

This used to be one of the first lessons in home economics classes; invariably white and pasty, it coated many a bland dish. When well made, however, it has a proper place in homey, creamed dishes, often making leftovers stretch or giving cooked foods new life. And it is important as a base for soufflés. The French term for this medium-thick white sauce is béchamel. The foolproof way to attain a perfectly smooth sauce is to have the milk hot when added to the butter and flour. It uses an extra pot, but as you become more proficient, this cautionary measure may not be necessary.

Yield Makes about 1 cup

Number Of Ingredients 5

2 tablespoons butter
2 tablespoons flour
1 1/4 cups milk, heated
Salt
Freshly ground pepper

Steps:

  • Melt the butter in a heavy-bottomed saucepan. Stir in the flour and cook, stirring constantly, until the paste cooks and bubbles a bit, but don't let it brown - about 2 minutes. Add the hot milk, continuing to stir as the sauce thickens. Bring it to a boil. Add salt and pepper to taste, lower the heat, and cook, stirring for 2 to 3 minutes more. Remove from the heat. To cool this sauce for later use, cover it with wax paper or pour a film of milk over it to prevent a skin from forming.
  • Cheese Sauce.
  • Stir in 1/2 cup grated Cheddar cheese during the last 2 minutes of cooking, along with a pinch of cayenne pepper.
  • How hot should the milk be?
  • Warm the milk on low heat just until little bubbles begin to form at the edges. Then remove from heat.

Time 20m

Yield 2 cups, 1 serving(s)

Number Of Ingredients 4

2 tablespoons butter or 2 tablespoons oleo
2 tablespoons flour
1/2 teaspoon salt
1 cup milk

Steps:

  • Melt butter over low heat in sauce pan.
  • Blend in flour and seasoning over low heat, stirring constantly, until mixture is smooth and bubbly.
  • Allow to cook for at least 1 minute to eliminate raw flour flavor.
  • Remove from heat, SLOWLY add milk, stirring constantly to make a smooth paste; stir in remaining milk.
  • Return to heat, stirring constantly.
  • Bring to a boil again and keep stirring until thickened.
  • If you want cheesy white sauce, add 1/2 cup shredded cheese (you can add as much cheese as you like to make it as cheesy as you wish).
  • Cover pan with tight fitting lid to prevent film formation until sauce is to be used.
  • Use on creamed and scalloped foods, sauces, gravies and in vegetable dips.

Tips:

  • Use a variety of cheeses: Don't be afraid to mix and match different types of cheeses to create a unique and flavorful sauce. Some popular options include cheddar, mozzarella, Parmesan, and Gruyère.
  • Add some seasonings: A little bit of garlic powder, onion powder, or paprika can go a long way in enhancing the flavor of your sauce. You can also add fresh herbs, such as basil, oregano, or thyme.
  • Don't overcook the sauce: White sauce is best when it is cooked until it is just thickened. Overcooking can cause the sauce to become grainy or rubbery.
  • Serve the sauce immediately: White sauce is best when it is served immediately after it is made. If you need to store the sauce, be sure to reheat it gently over low heat before serving.

Conclusion:

White sauce is a versatile sauce that can be used in a variety of dishes. Whether you are making a simple pasta dish or a hearty lasagna, white sauce is a great way to add flavor and richness. With a few simple tips, you can make a delicious white sauce that your family and friends will love.
